4 firm, almost-ripe pears (Bartlett or Bosc), peeled, cored, and cut lengthwise
2 tablespoons sugar
1 tablespoon butter, melted
2 tablespoons pine nuts
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 clove garlic, minced
Salt and pepper, to taste
N/A pepper
1/2 teaspoon Dijon mustard

2 tablespoons dried cranberries
1/4 cup fresh Parmigiano-Reggiano cheese
12 calendula blossoms

Tips for Making Lentil-Pear and Arugula Salad:

- Use High-Quality Lentils: Choose high-quality lentils such as Puy or French green lentils. They hold their shape well and have a mild, nutty flavor. - Cook Lentils Properly: Rinse the lentils thoroughly before cooking to remove any impurities. Cook them according to package instructions or until tender but still retain a slight bite. - Use Ripe Pears: Select ripe and juicy pears for the salad. They should be slightly firm but yield to gentle pressure. - Balance the Flavors: The salad dressing should complement the flavors of the lentils, pears, and arugula. Use a good quality olive oil, lemon juice, and honey or maple syrup to create a balanced dressing. - Add Some Crunch: To add some textural contrast, consider adding chopped walnuts, almonds, or pecans to the salad. - Serve Immediately: This salad is best served immediately after assembly. The arugula can wilt if it sits for too long.

Conclusion:

The Lentil-Pear and Arugula Salad is a delicious and nutritious salad that is perfect for lunch, dinner, or even as a side dish. It is packed with protein, fiber, and vitamins, and the combination of lentils, pears, arugula, and walnuts creates a delightful flavor and texture combination.
