Number Of Ingredients 15

1 onion, chopped
¼ cup olive oil
2 carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 bay leaf
1 teaspoon dried basil
1 (14.5 ounce) can crushed tomatoes
2 cups dry lentils
8 cups water
½ cup spinach, rinsed and thinly sliced
2 tablespoons vinegar
salt to taste
ground black pepper to taste

Steps:

  • In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
  • Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in spinach, and cook until it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.

Tips:

  • Use high-quality lentils: Fresher lentils cook more evenly and have a better flavor. Look for lentils that are plump and free of blemishes.
  • Rinse lentils before cooking: This helps to remove any dirt or debris and prevents the lentils from foaming during cooking.
  • Use the right amount of liquid: The amount of liquid you use will depend on the type of lentils you are cooking and the desired consistency of the dish. As a general rule, use about 2 cups of liquid for every cup of lentils.
  • Cook lentils until tender: Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and lose their flavor.
  • Add flavorings to taste: Lentils are a blank canvas for flavor, so feel free to add your favorite herbs, spices, and vegetables. Some popular additions include garlic, onion, cumin, coriander, turmeric, and chili powder.

Conclusion:

Lentils are a versatile and delicious ingredient that can be used in a variety of dishes. They are a good source of protein, fiber, and iron, and they are also relatively inexpensive. With a little planning and effort, you can easily create delicious and healthy lentil dishes that your whole family will enjoy.
