Number Of Ingredients 12

1/2 cup fresh or frozen lima beans, blanched
1/2 cup drained canned chickpeas, rinsed
1 zucchini, quartered lengthwise and cut crosswise into 1/4-inch-thick slices
1/2 small red onion, halved and thinly sliced
2 to 3 romaine leaves, cut into thin strips
1 ounce Parmesan cheese, broken into small chunks (1/4 cup)
1 tablespoon chopped fresh basil, plus small sprigs for garnish
4 1/2 teaspoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1/8 teaspoon red-pepper flakes
3/4 teaspoon coarse salt
Freshly ground pepper, to taste

Steps:

  • Combine lima beans, chickpeas, zucchini, onion, romaine, Parmesan, and chopped basil. Add lemon juice, oil, red-pepper flakes, salt, and pepper, and toss to combine. Garnish with basil sprigs.

Tips:

  • Use fresh and flavorful ingredients: The fresher the ingredients, the better the salad will taste. Look for ripe, colorful vegetables and herbs, and use high-quality olive oil and lemon juice.
  • Don't overcook the vegetables: Zucchini and lima beans should be cooked until they are tender but still have a slight crunch. Overcooked vegetables will be mushy and bland.
  • Use a variety of textures: This salad has a great mix of textures, from the crunchy chickpeas and lima beans to the tender zucchini and soft herbs. Adding a few nuts or seeds would also be a great way to add some extra crunch.
  • Don't skimp on the dressing: The dressing is what really brings this salad together. Make sure to use a good quality olive oil and lemon juice, and season it to taste with salt and pepper.
  • Serve the salad immediately: This salad is best served fresh. The zucchini and lima beans will start to lose their crunch if they sit for too long.

Conclusion:

This Lemony Zucchini, Chickpea, and Lima Bean Salad is a delicious and healthy summer salad that is perfect for potlucks, picnics, or a light lunch or dinner. It is packed with fresh, flavorful vegetables and herbs, and the lemony dressing is light and refreshing. With its vibrant colors and delicious flavors, this salad is sure to be a hit at your next gathering!
