1/4 large lemon, (cut into slices)
2½ cups sugar snap peas
1 medium leek, (cleaned well and sliced thinly)
1/2 tablespoon chopped fresh dill
salt and freshly ground black pepper, (to taste)

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the lemon slices and cook for 3 to 4 minutes, until softened. Remove the lemons from the pan and set aside. They'll be very soft and will start to come apart. That's ok!
  • Add the peas and leeks to the skillet; stir fry 3 to 4 minutes or until the pea pods are crisp tender. Stir in the dill and the lemon slices Season with salt and pepper and serve immediately.

2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons soy sauce

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add snap peas, cover, and steam until tender, about 2 minutes.

4 tablespoons vegetable oil
1 cup sliced fresh mushrooms
1 leek, sliced

Most takeout joints use snow peas, but sugar snaps are juicier and more succulent, and just as crunchy. (Their downside is that they are slightly more work: they need to be thinly sliced.) As for the sauce, it's simple: thick dark soy sauce (tamari works well), sesame oil, chicken broth and Madeira.
