Easy and elegant, this dish is a real catch. The use of the word "scampi" to mean a garlicky, buttery preparation for shrimp is more Italian-American than Italian; it's thought to have first appeared on a menu in 1950s New Jersey.

Tips:

  • Use fresh shrimp. Fresh shrimp will give your scampi a more flavorful and succulent taste.
  • Clean the shrimp properly. Make sure to remove the shell, head, and tail from the shrimp before cooking.
  • Marinate the shrimp. Marinating the shrimp in a mixture of olive oil, lemon juice, garlic, and herbs will help to add flavor and moisture to the shrimp.
  • Cook the shrimp over medium-high heat. This will help to sear the shrimp and prevent them from becoming overcooked.
