1 can (14-3/4 ounces) pink salmon, drained, skin and bones removed
3/4 cup whole milk
1 cup soft bread crumbs
1 large egg, lightly beaten
1 tablespoon minced fresh parsley
1 teaspoon finely chopped onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
LEMON SAUCE:
2 tablespoons butter
4 teaspoons all-purpose flour
3/4 cup whole milk
2 tablespoons lemon juice
1/4 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°. In a large bowl, combine first 9 ingredients. Fill 8 greased muffin cups with 1/4 cup salmon mixture. Bake 45 minutes or until browned. , Meanwhile, melt butter in a saucepan; stir in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from heat; stir in lemon juice, salt and cayenne. Serve with patties.

1 1/2 cups milk
2 cups soft breadcrumbs
2 eggs, beaten
2 tablespoons fresh parsley, chopped
2 teaspoons onions, minced
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
2 2/3 tablespoons all-purpose flour
1 1/2 cups milk
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon cayenne pepper

Steps:

  • Combine the first nine ingredients; mix well.
  • Spoon into eight greased muffin cups, using 1/4 cup in each.
  • Bake at 350 for 45 minutes or until browned.
  • Meanwhile, melt butter in a saucepan; stir in the flour to form a smooth paste. Gradually stir in milk; bring to a boil over medium heat, stirring constantly.

1/4 tsp pepper
LEMON SAUCE
2 Tbsp butter
4 tsp butter
3/4 c milk
2 Tbsp lemon juice
1/4 tsp salt
1/8-1/4 tsp cayenne pepper

Steps:

  • 1. In a large bowl, combine the first nine ingredients. Fill eight greased muffin cups with 1/4 cup salmon mixture. Bake at 350° for 45 minutes or until browned.
  • 2. Meanwhile, melt butter in a saucepan; stir in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the lemon juice, salt and cayenne. Serve with patties.
  • 3. I also make into patties and cook on indoor grill. After making patties spray each side before grilling. About 7-10 minutes. Serving as sandwich with lettuce and tomato.
