2 handfuls baby spinach, roughly-chopped
2 (5-ounce) cans tuna, drained
half of a small red onion, peeled and diced

Provided by Elena Silcock

Categories     Dinner, Lunch, Main course, Pasta

Time 25m

Number Of Ingredients 10

350g orzo
60ml olive oil , plus a drizzle for the rocket
2 garlic cloves , crushed
1 red chilli deseeded and finely chopped
4 tbsp capers , drained
1 small bunch parsley , finely chopped, a few leaves reserved to serve
270g pack cherry tomatoes , halved
200g can sustainably fished tuna in olive oil
1 lemon , juiced
rocket , to serve

Steps:

  • Bring a large pan of salted water to the boil and cook the orzo until al dente (about 1 min less than pack instructions). Drain and set aside, reserving some of the cooking water.
  • Meanwhile, heat the oil in a large pan over a medium heat, add the garlic and chilli, and sizzle for 2 mins. Add the orzo to the pan along with a spoonful of the cooking water, and stir well. Mix in the capers, parsley, tomatoes and tuna, flaking the fish with the back of a spoon. Cook for 2 mins or until everything is heated through, but not so long that the tomatoes become too soft.

LEMONY ORZO WITH ASPARAGUS AND GARLIC BREAD CRUMBS

Lemony Orzo With Asparagus and Garlic Bread Crumbs image

Every spoonful of this pasta has a happy jumble of lemony orzo, grassy asparagus, garlicky bread crumbs, fresh herbs and salty Parmesan. The pasta and thinly sliced asparagus cook together in the same pot, then rest in a lemony dressing while the garlic bread crumbs are toasted, so the pasta has time to absorb as much flavor as possible.

Provided by Ali Slagle

Categories     brunch, dinner, lunch, weekday, pastas, main course

Time 20m

Yield 4 servings

Number Of Ingredients 9

Kosher salt and black pepper
1 cup orzo
1 pound asparagus, trimmed and thinly sliced on a diagonal (about 1/4-inch thick)
5 tablespoons extra-virgin olive oil
1 teaspoon lemon zest plus 3 tablespoons lemon juice, plus more as needed (from about 1 large lemon)
1/2 cup panko or homemade bread crumbs
1 small garlic clove, finely grated
1/4 cup finely grated Parmesan, plus more for serving
1/2 cup fresh dill, mint or parsley leaves (or any combination), torn if large

Steps:

  • Bring a medium pot of salted water to a boil. Add the orzo and cook until al dente according to package directions. Two minutes before the orzo is done, add the asparagus. Drain the orzo and asparagus. Wipe out and reserve the pot.
  • While the orzo and asparagus cook, make the dressing: In a large bowl, stir together 3 tablespoons oil and the lemon zest and juice; season to taste with salt and pepper. Add the drained orzo and asparagus and toss to coat. Set aside while you toast the bread crumbs.
  • In the reserved pot, heat the remaining 2 tablespoons oil over medium. Add the panko and cook, stirring, until golden brown, 3 to 5 minutes. Remove from heat, then stir in the garlic and season with salt and pepper.
  • Stir the Parmesan and herbs into the orzo, taste, then season with salt, pepper and additional lemon juice, if desired. Top with the toasted bread crumbs and more Parmesan if you like. Serve warm or at room temperature.

Tips:

  • Choose High-Quality Ingredients: Opt for fresh and flavorful ingredients to elevate the dish. Use juicy lemons, succulent tuna, and aromatic herbs.
  • Cook the Orzo Perfectly: Follow the package instructions to cook the orzo al dente, ensuring it retains a slight bite.
  • Use a Generous Amount of Lemon: The lemon is the star of this dish, so don't be shy about adding it. The zest and juice bring a bright and tangy flavor.
  • Don't Overcook the Tuna: Tuna cooks quickly, so add it towards the end of the cooking process to prevent it from becoming dry.
  • Season to Taste: Adjust the seasonings according to your preference. Add more salt, pepper, or lemon juice until the flavors come together harmoniously.
  • Garnish Before Serving: Fresh herbs like parsley or cilantro add a vibrant color and extra freshness to the dish. Sprinkle them on top before serving.

Conclusion:

Lemony orzo with tuna is a delightful and versatile recipe that combines the tanginess of lemon, the savory richness of tuna, and the comforting texture of orzo pasta. It's a perfect meal for busy weeknights or light and refreshing lunches. With its vibrant flavors and ease of preparation, this dish is sure to become a favorite in your kitchen. So gather your ingredients, follow the step-by-step guide, and enjoy a delicious and satisfying meal that's packed with flavor and goodness. Happy cooking!
