I tried this recipe when I was on a low-carb diet over a year ago. I was surprised at how great these were. They were the tastiest Brussels sprouts I've ever had. I got the recipe from the Atkins website, and I still use it.

1 pint Brussels sprout, halved,outer leaves removed,bottoms trimmed
1/4 cup butter (1/2 stick)
1/2 teaspoon salt
1 lemon, grated for rind,then halved

Steps:

  • In a medium pot with tight-fitting lid, set a steamer basket over 1 1/2 inches water.
  • Add Brussels sprouts and steam over high heat until tender, about 10 minutes.
  • Melt butter in a large skillet over medium-high heat.
  • Add salt& cook, watching carefully, until butter sizzles, browns slightly, and gives off a nutty aroma.
  • Squeeze the juice from the lemon halves into the pan and add the zest.

1 teaspoon lemon juice

¾ lb brussel sprout, trimmed and halved
4 cloves garlic, minced
1 lemon lemon zest
⅔ cup full-fat goat milk
2 oz goat cheese
1 teaspoon dijon mustard

1 pinch red pepper flakes
¼ cup fresh basil, chopped, plus more for garnish
⅓ cup grated parmesan cheese

4 ounces slab bacon or pancetta (Italian bacon), coarsely chopped
3 tablespoons olive oil, divided, plus more for serving
1 cup coarse fresh breadcrumbs
1 small Fresno chile, seeds removed, finely chopped
1 tablespoon thyme leaves
1 teaspoon finely grated lemon zest
Kosher salt
2 tablespoons fresh lemon juice, divided

Steps:

  • Remove outer leaves from brussels sprouts; set aside. Halve sprouts; set aside. Pulse bacon in a food processor until finely ground. Heat 1 Tbsp. oil in a large skillet over medium-low.   • Transfer brussels sprouts to a platter, drizzle with more oil, and top with reserved breadcrumb mixture (reheat breadcrumb mixture if needed in a small skillet or in microwave).

  • Trim the ends off the Brussels sprouts. Peel off and discard any blemished outer leaves. Cut each Brussels sprout in half from top to bottom. Lay it flat and slice into fine shreds. (Can also shred Brussels sprouts using a mandoline or food processor fitted with a slicing blade.) Using your hands, fluff up the sprouts and separate the shreds. Heat the olive oil in a large skillet over moderate heat. Add the garlic and paprika and cook, stirring, until the garlic is fragrant, about 30 seconds.
