LEMON PUDDING CAKE

Lemon Pudding Cake image

A moist lemon cake sits atop a delicate custard in this recipe, adapted from Ian Knauer's book "The Farm." The magic is in the cooking: Setting a 8-inch baking dish in a roasting pan filled halfway with water allows the custard to form while the top bakes. It's an excellent party dish, warm and just out of the oven. But it's equally as good out of the fridge, its flavors melded and mellowed.

Tips:

  • Choose the right lemons: Use Meyer lemons or Eureka lemons for a sweeter flavor. If using regular lemons, add an extra tablespoon of sugar to the recipe.

  • Zest the lemons finely: This will release the most flavor from the lemons. You can use a microplane grater or a vegetable peeler to zest the lemons.

  • Don't overmix the batter: Overmixing the batter will result in a tough pudding. Mix just until the ingredients are combined.

  • Bake the pudding in a water bath: This will help to prevent the pudding from curdling. Place the pudding dish in a larger baking dish filled with hot water.

  • Let the pudding cool completely: The pudding will continue to thicken as it cools. Let it cool for at least 2 hours, or overnight, before serving.

  • Serve the pudding with your favorite toppings: Some popular toppings include whipped cream, ice cream, or berries.

Conclusion:

This lemon baked pudding is a classic dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you like it tart or sweet, this pudding is sure to please. So next time you are looking for a delicious and easy dessert, give this lemon baked pudding a try!
