2 medium acorn squash
1 cup vegetable or chicken stock
2 tablespoons apple cider vinegar
2 tablespoons olive oil
2 teaspoons fresh thyme leaves, plus 4 sprigs
Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) butter

Steps:

  • Cut each acorn squash into 6 slices and remove seeds.
  • Pour the stock and cider vinegar into a 6-quart slow cooker. Add the squash slices, drizzle with the olive oil, and sprinkle with the thyme leaves and some salt and pepper.

1 cup water, plus 2 tablespoons, divided
1/2 cup sugar
2 tablespoons lemon juice
1 tablespoon butter
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Wash the squash; cut in half lengthwise; remove and discard the seeds and membrane.
  • Cut each half crosswise into 1/2 inch slices, discarding ends.
  • Place slices in a large skillet.
  • Add 1 cup water; bring to boil.
  • Reduce heat; cover and simmer for 20 minutes or until or until tender.
  • Meanwhile, in a small saucepan, combine sugar and remaining 2 tablespoons water.

2 tablespoons honey
4 teaspoons olive oil, plus more for greasing the pan
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt

Steps:

  • Heat oven to 375 degrees. Cut 1/4 inch from stem end and bottom of each squash, and discard. Cut each squash in half crosswise. Discard seeds and membrane.
