2 onions, peeled and chopped
6 cups chicken broth
2 pounds carrots, peeled and sliced
2 tablespoons grated fresh ginger
1 cup whipping cream

Steps:

  • In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced.
  • Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. 1 tablespoon unsalted butter
1 cup onion, chopped
1 tablespoon kosher salt
2 lbs carrots
2 tablespoons lemongrass
1 tablespoon ginger
1 (14 ounce) can coconut milk
4 cups vegetable broth

  • "Heat a large soup pot over medium heat. When hot, add the butter and oil. 1 tbsp vegetable oil
1 onion , finely chopped
1 garlic clove , chopped
knob of fresh root ginger , grated
1 red chilli , deseeded and chopped
1 tsp mild curry powder , plus extra
1kg carrots , trimmed and sliced
2 lemongrass stalks, bashed
2 strips orange zest
400g can coconut milk
700ml vegetable stock

Steps:

  • Heat the oil in a large pan with a lid. Tip in the onion, garlic, ginger and chilli, then cook for 3-5 mins until soft. Stir in the curry powder, followed by the carrots, lemongrass and zest, then cover and cook over a low heat for 10 mins more.
  • Give the coconut milk can a shake, then pour most of it into the pan along with the vegetable stock. Bring to the boil, then turn down and simmer for 15 mins until the carrots are really soft. Remove the lemongrass and orange zest, then use a stick blender or food processor to whizz until smooth.
