1 tablespoon confectioners' sugar
1 teaspoon grated lemon zest, plus more for garnish
1 teaspoon fresh lemon juice
1 pint fresh blueberries, or 1 pound frozen blueberries, thawed
2 tablespoons honey or pure maple syrup
1 teaspoon fresh lemon juice
1 cup spelt flour
1 cup whole-wheat flour
1 tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon fine sea salt
2 cups low-fat buttermilk
5 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon finely grated lemon zest

Steps:

  • Make the ricotta cream: In a small bowl, combine the ricotta, confectioners' sugar, lemon zest and lemon juice and whisk until light and fluffy. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.

Steps:

  • Add buttermilk mixture to well in flour mixture and whisk until no large lumps remain.
  • Gently fold 1/2 of egg whites into batter, then fold in remaining egg whites (batter will be streaked with egg whites).

Steps:

3 tablespoons powdered sugar
1 teaspoon grated lemon peel
1 package (3 ounces) cream cheese, softened
2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons powdered sugar
2 tablespoons vegetable oil
2 teaspoons grated lemon peel
1 egg
1/2 cup chopped slivered almonds
Additional powdered sugar, if desired
Toasted slivered almonds, if desired

Steps:

  • To make Lemon Cream, beat whipping cream, 3 tablespoons powdered sugar, 1 teaspoon lemon peel and the cream cheese in chilled small bowl with electric mixer on high speed just until soft and fluffy. Refrigerate while making waffles.
  • Heat waffle iron; grease if necessary.
  • Stir Bisquick mix, milk, 2 tablespoons powdered sugar, the oil, 2 teaspoons lemon peel and the egg in large bowl until blended. Stir in 1/2 cup chopped almonds. Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Sprinkle waffles with powdered sugar and toasted almonds. Serve with Lemon Cream.

The ingredints did not match the directions and as I hadn't made it (and could find no close match on the internet to see where the error was) I have revised this recipe. I HAVE made these before and they are delicious. If you love lemon meringue pie, you are in for a treat.

2 cups plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons extra finely granulated sugar
1 egg, separated
1 1/4 cups milk
1/8 cup unsalted butter, melted
2 teaspoons finely grated lemon zest
12 tablespoons yogurt
12 tablespoons lemon curd
12 small meringues, lightly crushed
mint leaf, to decorate

Steps:

  • Prepare and preheat the waffle iron or machine as directed.
  • Combine the flour with the baking soda, salt and sugar in a bowl and make a well in the center. Add the egg yolk and milk, and gradually work into the flour using a whisk. Beat gently until smooth. Carefully stir in the melted butter and lemon zest.
  • In a grease-free bowl, whisk the egg white until stiff and carefully fold into the batter using a large metal spoon.
  • Prepare the waffles & keep warm until you are ready to serve.
  • To serve, gently swirl the yogurt and lemon curd together and spoon on top of the waffles. Sprinkle with crushed meringue and decorate wih mint leaves.

These waffles are so good. They are full of citrus flavor and great served with blueberries or other fruit too. I hope you like them.

3 c all purpose flour
3/4 c granulated sugar
4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
4 large eggs, lightly beaten with whisk or fork
2 c dairy buttermilk
2 tsp pure vanilla extract
1/4 c fresh lemon juice
zest of one lemon
3/4 c butter, melted, and cooled to room temperature
2 c lemon or vanilla yogurt

Steps:

  • 1. Combine flour, sugar, baking soda, baking powder and salt in a large mixing bowl and whisk to combine. Add the beaten eggs, buttermilk and vanilla; whisk until blended. Stir in lemon juice and zest. Fold in melted butter and then the yogurt. Let batter rest 5 minutes before using.
  • 2. Preheat your waffle iron to desired setting. Pour 2 cups of batter onto the center of the back of the waffle maker; spread batter evenly using a heat-proof spatula. Close lid. When tone sounds, your waffles are ready. Carefully remove you delicious breakfast or brunch waffles. Repeat with remaining batter. Serve while crisp and hot. Add a little lemon juice and grated ginger to your Maple syrup and serve with these wonderful waffles.
  • 3. Any waffles left.. Let cool. place between squares of waxed paper and place 2 to a zip-loc freezer bag and store in freezer for up to 3 months. I doubt they will last that long. Enjoy.

Tips:
