1-2 tablespoons lemongrass paste, or 2 tablespoons freshly grated lemongrass (white parts only)
2 cloves garlic
1/4 cup fish sauce
1/4 cup + 2 tablespoons vegetable oil
1/4 cup lime juice (3-4 limes)
2 tablespoons rice vinegar
2-3 tablespoons brown sugar
1 tablespoon roasted red chile paste (I used this kind but you can use whatever will give you some heat)
1 package vermicelli or thin rice noodles (about 8 ounces)
2 large carrots, shredded or julienne cut
1 cucumber, julienne cut
a little bundle of fresh mint
a little bundle of fresh cilantro
a handful of chopped peanuts
cooked tofu, shrimp, or chicken (or whatever protein you like)

Steps:

  • Make the sauce by blending in a food processor or shaking together in a jar.
  • Cook vermicelli according to package directions. Rinse well with cold water to cool and remove starchiness. Drain well. Toss noodles with about half of the sauce.
  • Plate individual servings of noodles in a bowl and top with the tofu, carrots, mint, etc. Spoon extra sauce over the top.
  • Toss all the noodles with the tofu, peanuts, and carrots (leave out the cucumber and herbs - they will get soggy). Add a little more sauce as needed and store in the fridge. When you're ready to eat, serve up your pre-mixed stuff with some fresh cucumbers, herbs, and extra sauce.

½ (8 ounce) package vermicelli pasta
1 large organic lemon
¾ cup heavy cream
1 teaspoon instant vegetable bouillon granules
salt and freshly ground black pepper to taste
2 large egg yolks
1 tablespoon fresh basil, chopped, or more to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in vermicelli pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until the pasta is tender yet firm to the bite, 3 to 4 minutes.
  • Meanwhile, wash lemon under hot water and dry. Use a microplane to grate off the zest of half the lemon. Juice the entire lemon.

1 cup broken vermicelli
2 tablespoons extra-virgin olive oil
1 small red onion, finely chopped
1/2 jalapeno chile, seeded and minced
2 cloves garlic, thinly sliced
1/2 pound small calamari, cleaned, cut into 1/2-inch-thick rings, and tentacles halved lengthwise
2 to 3 tablespoons ghee
2 teaspoons yellow mustard seeds, toasted and ground

1 cup finely julienned daikon
2 teaspoons granulated sugar
1/2 teaspoon salt
1 tablespoon rice vinegar
3 tablespoons light brown sugar
3 tablespoons rice vinegar
4 tablespoons lime juice
3 tablespoons Vietnamese fish sauce, like Red Boat
3 garlic cloves, minced
1 tablespoon minced or grated ginger
1 medium-hot red chile pepper, such as Fresno, finely chopped
1 red or green bird chile pepper, thinly sliced, or substitute half a thinly sliced serrano pepper
1 1/2 pounds shrimp, preferably wild, peeled and deveined
2 tablespoons Vietnamese fish sauce
1 tablespoon light brown sugar
3 garlic cloves, minced
3 tablespoons finely chopped lemongrass, pale tender center part only
1 pound rice noodles, preferably rice vermicelli
1 or 2 small lettuce heads, with the leaves separated, rinsed and patted dry
3 cups mixed herb sprigs, such as cilantro, mint, basil, watercress and tender celery leaves
2 tablespoons vegetable oil
4 scallions, slivered
4 tablespoons crushed roasted peanuts
Handful of bean sprouts (optional)

Steps:

  • Make the pickled vegetables: Put carrot and daikon in a small bowl and sprinkle with sugar and salt. Add rice vinegar, toss well and set aside.

  • Meanwhile, bring a large pot of water to boil. Turn off heat and add rice noodles. Soak noodles, stirring occasionally, until softened, usually about 7 to 8 minutes. Drain and rinse with cold water. Leave in colander at room temperature.
  • Prepare a platter of lettuce leaves and herb sprigs for the table. Keep cool, covered with a damp towel.
  • Put oil in a wok or frying pan over medium-high heat. When oil is hot, add shrimp without crowding (work in batches if necessary). Cook for about 2 minutes per side, until lightly browned.

2 (8 ounce) boxes vermicelli
1 teaspoon olive oil
4 teaspoons salad oil
1 teaspoon Accent seasoning
3 teaspoons fresh limes or 3 teaspoons fresh lemon juice
1 cup celery, chopped
1 green pepper, chopped
1 bunch green onion, chopped, all parts
1 (2 ounce) jar pimiento, drained and chopped
1 (3 7/8 ounce) can black olives, drained and chopped
2 cups mayonnaise
1 (10 ounce) package frozen peas, unthawed
fresh coarse ground black pepper
beau monde seasoning
garlic salt or garlic powder

Steps:

  • Boil vermicelli in salted water with 1 T oil added.
  • Don't overcook.
  • Drain and blanch in cold water.
