ANGEL CAKE WITH RASPBERRY SAUCE

Angel Cake With Raspberry Sauce image

Provided by Marian Burros

Categories     dinner, easy, quick, dessert

Time 5m

Yield 3 servings

Number Of Ingredients 4

1 pint fresh raspberries
4 to 6 tablespoons sugar
1 to 2 tablespoons lemon juice
3 slices angel cake

Steps:

  • Wash raspberries, and drain. Place in food processor with 4 tablespoons sugar and 1 tablespoon lemon juice, and process. Adjust sugar and lemon juice as needed.
  • Serve over slices of angel cake.

Tips:

  • Ensure all ingredients are at room temperature before starting. Room temperature ingredients emulsify better, resulting in a smoother, more uniform batter.
  • Properly measure your ingredients using a kitchen scale for accuracy. Baking is a science and precise measurements are essential for a successful cake.
  • Beat the egg whites until stiff peaks form. This will help incorporate air into the batter, resulting in a light and fluffy cake.
  • Gently fold the egg whites into the batter until just combined. Overmixing can deflate the batter and result in a dense cake.
  • Bake the cake at 350°F (175°C) for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Immediately invert the cake onto a wire rack to cool. This will prevent the cake from sinking in the center.
  • Make the raspberry-blueberry sauce while the cake is cooling. This will give the flavors time to meld and intensify.
  • Serve the cake with the raspberry-blueberry sauce, whipped cream, or ice cream.

Conclusion:

This lemon-vanilla angel food cake with raspberry-blueberry sauce is a delightful dessert that is perfect for any occasion. The cake is light and fluffy, with a delicate lemon-vanilla flavor. The raspberry-blueberry sauce is sweet and tangy, adding a burst of flavor to each bite. Whether you are a seasoned baker or a beginner, this recipe is sure to impress your friends and family.
