2 1/2 teaspoons freshly grated lemon zest
1/2 cup well-chilled heavy cream
For the strawberry filling
1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
1 1/2 cups sliced strawberries
1/3 cup strawberry preserves
2 tablespoons granulated sugar
3 large egg yolks
1/2 cup well-chilled heavy cream
For the frosting
1 1/2 teaspoons unflavored gelatin
3 tablespoons cold water
1 1/4 cups will-chilled heavy cream
1/3 cup sour cream
2 tablespoons confectioners' sugar
strawberries for garnish if desired

Steps:

  • Make the meringue layers:
  • Line 2 buttered baking sheets with parchment paper or foil and on them trace 3 circles using the bottom of an 8 1/2-inch springform pan as a guide. In a large bowl with an electric mixer beat the egg whites with a pinch of salt until they hold soft peaks, add the sugar gradually, beating, and beat the whites until they hold stiff glossy peaks. Transfer the meringue to a pastry bag fitted with a 1/2-inch plain tip, beginning in the middle of each parchment circle pipe the meringue in a tight spiral to fill in each circle, and smooth the tops. Bake the meringues on 2 racks in a preheated 250°F. oven, switching the baking sheets from one rack to the other every 30 minutes, for 1 to 1 1/2 hours, or until they are firm when touched and very pale golden. Remove the parchment with the meringue from the baking sheets, let the meringue cool on it, and peel off the parchment carefully. The meringue layers may be made 1 day in advance and kept, wrapped well in plastic wrap, at room temperature. With a serrated knife trim the meringue layers so that they will just fit inside the 3 1/2-inch springform pan.
  • Oil the pan, line it with plastic wrap, leaving on overhang, and arrange 1 of the meringue layers, smooth side down, in the bottom.
  • Make the lemon filling
  • In heavy saucepan sprinkle the gelatin over the water, let it soften for 1 minute, and heat the mixture over low heat, stirring, until the gelatin is dissolved. Whisk in the lemon juice, the sugar, the egg yolks, and zest and cook the mixture over moderately low heat, whisking constantly, until it registers 170°F. on a candy thermometer. Transfer the mixture to a metal bowl set in a larger bowl of ice and cold water and stir it occasionally until it is very thick but not set. In a bowl beat the cream until it holds soft peaks and fold it into the lemon mixture.
  • Pour the lemon filling over the meringue layer in the springform pan, top it with 1 of the remaining meringue layers, and freeze the torte for 1 hour, or until the lemon filling is firm.
  • Make the strawberry filling:
  • In a heavy saucepan sprinkle the gelatin over the water, let it soften for 1 minute, and heat the mixture over low heat, stirring, until the gelatin is dissolved. In a food processor or blender purée the strawberries with the preserves and the sugar, whisk the purée and the egg yolks into the gelatin mixture, and cook the mixture over moderately low heat, whisking constantly, until it registers 170°F. on a candy thermometer. Transfer the mixture to a metal bowl set in a larger bowl of ice and cold water and stir it occasionally until it is very thick but not set. In a bowl beat the cream until it holds soft peaks and fold it into the strawberry mixture.
  • Pour the strawberry filling over the meringue layer in the springform pan, top it with the remaining meringue layer, smooth side up, and fold the plastic wrap overhang over the top. Freeze the torte for 2 hours, or until it is frozen. The torte may be prepared up to this point 2 days in advance and dept wrapped well and frozen.
  • Make the frosting:
  • In a small saucepan sprinkle the gelatin over the water, let it soften for 1 minute, and heat the mixture over low heat, stirring, until the gelatin is dissolved. In a bowl beat the heavy cram and the sour cream with the confectioners' sugar until the mixture just holds stiff peaks, add the gelatin mixture in a stream, beating, and beat the frosting until it holds stiff peaks.
  • Remove the side of the pan and transfer the torte to a serving plate, discarding the plastic wrap. Spread a thin layer of the frosting on the top and side of the torte and freeze the torte for 10 minutes, or until the frosting is firm. Transfer the remaining frosting to a pastry bag fitted with a decorative tip (such as a basket-weave tip), pipe it over the torte, and freeze the torte for at least 30 minutes and up to 4 hours. Let the torte stand in the refrigerator for 30 minutes before serving and garnish it with the strawberries.

1/4 teaspoon cream of tartar
3/4 cup sugar
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup water

1 teaspoon grated lemon peel
1/3 cup lemon juice
1 cup whipping cream

Steps:

  • Heat oven to 275°F. Line cookie sheet with cooking parchment paper or heavy brown paper. In medium bowl, beat egg whites and cream of tartar with electric mixer on high speed until foamy. Beat in 3/4 cup sugar, 1 tablespoon at a time; continue beating until stiff peaks form and mixture is glossy. Do not underbeat. On cookie sheet, shape meringue into 9-inch round with back of spoon, building up side.
  • Bake 1 hour 30 minutes. Turn off oven; leave meringue in oven with door closed 1 hour. Finish cooling at room temperature, about 2 hours.
  • In 2-quart saucepan, mix 3/4 cup sugar, the cornstarch and salt. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Gradually stir at least half of the hot mixture into egg yolks; stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat.
  • Stir in butter, lemon peel and lemon juice. Press plastic wrap onto surface to keep it from drying out. Cool to room temperature. Spoon into meringue shell. Cover and refrigerate at least 12 hours but no longer than 24 hours.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Spread over filling. Refrigerate until serving. Store in refrigerator.

This is a simple lemon torte that uses lots of fresh lemon juice in both the cake and the accompanying glaze. This cake is so simple that you really need to use fresh lemon juice, as opposed to bottled juice, to get the best result. 2 1/2 cups graham crackers, crushed
4 tablespoons sugar
1 (12 ounce) can fat-free evaporated milk, chilled overnight
1 cup sugar
1 teaspoon vanilla
8 ounces cream cheese
3 ounces lemon Jell-O gelatin
1 cup hot water
1 (20 ounce) can cherry pie filling

Steps:

  • Mix first 3 ingredients in a 9x13 pan.
  • Press down and micro on high for 2 to 2 1/2 minutes.
  • Cool.
  • Dissolve jello in hot water and chill until slightly thickened.

Lemon cream:
½ c fesh lemon juice
½ c sugar
6 T unsalted butter ( small pieces)
2 tsp. grated lemon peel
3 eggs beaten to blend
Almond pastry
10 T unsalted butter (RT)
¾ C sugar
1 egg yolk
2 tsp. grated lemon peel
¼ tsp almond extract
1 C plus 2T sifted flour
¼ tsp salt(scant)
¾ C ground almonds
1 egg beaten with 2T whipping cream ( glaze)

Steps:

  • Cook lemon juice, sugar, butter and lemon peel in heavy nonaluminum pan over low heat swirling pan until sugar dissolves and butter melts. Increase heat and bring to simmer. Gradually whisk into eggs. Return to pan and whisk until custard thickens and leaves a path on back of spoon when finger is drawn across ( about 4 minutes - do not boil) Strain into a bowl. Cool and press plastic wrap on surface. Refrig. Cream butter with sugar till light. Mix in yolk, peel, extract. Combine flour, salt - add to butter mixture. Blend just until combined. Gently mix in nuts. Pat pastry into into a ¾ inch thick 9.5x4 inch rectangle on waxed paper. Wrap and chill at least 2 hours. Cut 4 ¼ inch strips lengthwise from pastry. Turn on side and cut lengthwise into 3 strips. Freeze. Pat remaining dough into bottom and sides of 9.5 inch tart pan. Refrig at least 2 hours. Spread lemon curd in bottom of tart. Arrange lattice strips across. Brush with glaze. Bake at 350 for 25 minutes. Turn oven to 325 and bake until golden , 15 - 20 minutes. Cool for ten minutes. Loosen pan edges but do not remove. Cool and then sprinkle with conf sugar.

This is a moist, refreshing cake that presents beautifully. The inspiration for it came from a friend who loves the flavor of lemon and from luvmybge's Chocolate Bavarian Torte (recipe #106926). I wanted to use 9 inch cake pans but wanted the split layers to be a bit thicker so I have to thank Laurie for her Cake Mix Extender (recipe #54269). I hope you enjoy this as much as my company did. 1 (18 ounce) box lemon cake mix (not pudding in the mix)
3/4 cup flour
1/4 cup granulated sugar
1 teaspoon baking soda
1/2 cup water
1/4 cup oil
1 egg
8 ounces cream cheese, softened
2/3 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 teaspoons lemon extract
2 teaspoons lemons, zest of
3 cups heavy cream, whipped or 1 (12 ounce) carton non-dairy whipped topping, thawed.

Steps:

  • Combine the flour, granulated sugar and baking soda with the dry cake mix.
  • Add the wet ingredients called for on the cake mix box to the dry ingredients as directed.
  • Add the water, oil and egg found in this recipe in addition to that on the cake mix box.
  • I used 9 inch round cake pans.
  • Bake cake as directed.
  • It may be necessary to add 5 minutes to the baking time.
  • Test for doneness as directed on the box.
  • Cool completely.
  • Split each layer in half.
  • FILLING:.
  • Cream confectioners sugar, vanilla, cream cheese, lemon extract, salt and lemon zest until light and fluffy.
  • (A taste will tell you if it is lemony enough. If not to your liking add a bit more lemon extract).
  • Fold in whipped cream or non-dairy whipped topping.
  • Put one layer on plate.
  • Top with some of filling.
  • Add next layer.
  • Top with more filling.
  • Add third layer.
  • Top with more filling.
  • Add top layer and spread the rest of the filling on top.
  • Garnish with lemon zest.
  • Refrigerate.

Spread on brown paper in whatever shape you want ( I do 3 rounds) place on cookie sheet and back at 275 for 1 hr, cool in oven. beat egg yolks in double boiler, slowly add in sugar, lemon juice and peel. keep beating over med heat until beater leaves trail in pudding ( 10 - 12 mins). take off heat and chill in fridge. can be made ahead of time day before. layer meringues with curd then top with whipped cream.

I¼ c. sugar
1/3 c. butter
1T. grated lemon rind
1 c. lemon juice (4 lemons)
6 eggs
1½ c. whipping cream
Meringues:
1½ c. Sugar
2 T. cornstarch
2 t. grated lemon rind
6 egg whites (1 cup)
1 t. vanilla

Steps:

  • Lemon Curd method: In saucepan over medium high heat, heat sugar, butter, lemon rind and juice, stirring until sugar is dissolved. In bowl beat eggs; whisk in lemon mixture. Return to saucepan and cook stirring just until boiling. Simmer 1 minute. Pour into bowl. Place plastic wrap directly onto surface and chill in refrigerator to room temperature. (Can be refrigerated for up to 1 day) Whip cream and fold into lemon mixture. Meringue method: Combine sugar, cornstarch and rind; set aside. Beat egg whites (at room temperature) until soft peaks form. Add vanilla. Then beat adding sugar slowly until very stiff and shiny peaks form. Make 3 meringues, piped with pastry bag in 3 concentric circles on parchment paper (or butter pan and dust very lightly with flour).Circles will be roughly the size of the spring-form pan that you use in assembly. Bake in 250 oven for at least 1 hour or until very dry and lightly golden. Cool. (May be stored in cool, dry place for up to 3 days). Assembly: Line spring-form (9 or 10") pan and overlap sides with plastic wrap. Fit 1 meringue into pan. Pour 1/3 lemon mixture over top. Repeat layers twice. Sprinkle crumbled meringue over top (left over from trimmed circles). Freeze for at least 8 hours. Torte can be removed from pan and wrapped well and kept frozen for up to 1 week. Let soften in refrigerator for 45 minutes or more before serving. Makes 12 servings.

1/4 teaspoon cream of tartar
3/4 cup sugar
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt

1 teaspoon grated lemon peel
1/3 cup lemon juice
1 cup whipping cream

Steps:

  • Heat oven to 275°F. Line cookie sheet with cooking parchment paper or heavy brown paper. In medium bowl, beat egg whites and cream of tartar with electric mixer on high speed until foamy. Beat in 3/4 cup sugar, 1 tablespoon at a time; continue beating until stiff peaks form and mixture is glossy. Do not underbeat. On cookie sheet, shape meringue into 9-inch round with back of spoon, building up side.
  • Bake 1 hour 30 minutes. Turn off oven; leave meringue in oven with door closed 1 hour. Finish cooling at room temperature, about 2 hours.
  • In 2-quart saucepan, mix 3/4 cup sugar, the cornstarch and salt. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Gradually stir at least half of the hot mixture into egg yolks; stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat.
  • Stir in butter, lemon peel and lemon juice. Press plastic wrap onto surface to keep it from drying out. Cool to room temperature. Spoon into meringue shell. Cover and refrigerate at least 12 hours but no longer than 24 hours.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Spread over filling. Refrigerate until serving. Store in refrigerator.

1 stick margarine,softened
1/2 c nuts,chopped fine
1 c confectioners' sugar
8 oz cream cheese
8 oz cool whip
2 pkg instant lemon pudding mix
21/2 c milk

  • 1. Mix together flour, margarine and 1/4 cup nuts.Press into 9 by 13 inch pan.Bake 15 minutes at 350 degrees .Cool
  • 2. Add 1/2 carton Cool Whip to cream cheese and confectioner's sugar and combine.
  • 3. Spread this mixture over cooled crust.Prepare the 2 pkgs.( 4 oz.each) of instant pudding with 2 1/2 c. milk.
