LEMON SYLLABUB

This is a deliciously light, creamy, sophisticated little dessert from days gone by. I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch--please note that either version contains alcohol, so you may not want to serve this to younger family members.

Tips:

  • Use a large bowl to whisk the cream, as it will double in size.
  • If you don't have a balloon whisk, you can use a hand mixer on low speed.
  • Make sure the cream is very cold before you start whisking, as this will help it to whip up quickly and easily.
  • Once the cream has thickened, add the lemon juice and sugar a little at a time, whisking constantly.
  • Be careful not to over-whisk the cream, as it can become grainy.
  • If you're making the syllabub ahead of time, cover it with plastic wrap and refrigerate for up to 24 hours.
  • Serve the syllabub in individual glasses or bowls, topped with fresh berries or fruit.

Conclusion:

Lemon Syllabub is a light, refreshing, and delicious dessert that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. Whether you like it tart, sweet, or somewhere in between, this classic dessert is sure to please everyone.
