LEMON SYLLABUB

This is a deliciously light, creamy, sophisticated little dessert from days gone by. I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch--please note that either version contains alcohol, so you may not want to serve this to younger family members.

  • Don't over-whip the cream. Over-whipped cream will be grainy and less fluffy.
  • If you don't have a syllabub maker, you can use a blender or food processor to whip the cream and lemon mixture.
  • Serve the syllabub immediately, or it will start to lose its volume.

Lemon syllabub is a light and refreshing dessert that is perfect for any occasion. It's easy to make and can be made ahead of time, making it a great option for busy hosts. The combination of lemon, cream, and wine is a classic flavor combination that is sure to please everyone.
