Time 55m

Yield 20 servings

Number Of Ingredients 9

2 c. flour
1/2 c. sugar
1/4 tsp. salt
2 sticks (1 cup) salted butter, cut into small cubes
1 1/2 c. sugar
1/4 c. flour
4 whole large eggs
Zest and juice of 4 medium-sized lemons
Powdered sugar, for sifting

  • Stir together the flour, sugar, and salt. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the sugar and flour. Crack in the eggs and whisk to combine. Add the lemon zest and juice and mix until combined. Pour over the crust and bake about 20 minutes.

LEMON SQUARES

Lemon Squares image

The recipe for these sweet, tart squares, adapted from the "Wellesley Cookie Exchange Cookbook" by Susan Mahnke Peery, was published in The Times in December 1990, part of a Christmas cookie roundup. But they can be made for just about any occasion, whether you're in the holiday spirit or just craving something with a little pucker. The buttery shortbread mellows a lemon topping, as does the dusting of confectioners' sugar. Make it to cap off a weeknight dinner, or for a weekend afternoon snack, paired with a cup of tea.

Tips:

  • Using fresh lemon juice and zest will give your lemon squares the best flavor. If you don't have fresh lemons, you can use bottled lemon juice and zest from a jar, but the flavor will not be as good.
  • Do not over-mix the batter. Over-mixing will make the lemon squares tough.
  • When baking the lemon squares, keep an eye on them so that they do not over-bake. Over-baked lemon squares will be dry and crumbly.
  • Allow the lemon squares to cool completely before cutting them. This will help them to hold their shape.
  • For a richer flavor, you can use unsalted butter instead of vegetable oil in the crust.
  • To make a gluten-free version of these lemon squares, use gluten-free flour instead of all-purpose flour.
  • You can also add other ingredients to your lemon squares, such as berries, nuts, or chocolate chips.

Conclusion:

Lemon squares are a classic dessert that is perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect lemon squares every time.
