Tips:

  • Chill the dough: Chilling the dough helps to firm it up and make it easier to work with, which prevents the cookies from spreading too much in the oven.
  • Use fresh lemon zest: Fresh lemon zest provides the best flavor for these cookies. If you don't have fresh lemons, you can use 1 teaspoon of dried lemon zest instead.
  • Cream the butter and sugar together until light and fluffy: This will help to create a smooth and creamy cookie dough.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Bake the cookies until the edges are just starting to brown: This will ensure that the cookies are cooked through but not overdone.
  • Let the cookies cool completely before frosting them: This will help the frosting to set properly.

Conclusion:

These lemon spice butter cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy with a bright lemon flavor and a hint of spice. The cookies are also coated in a sweet and tangy lemon glaze that adds an extra layer of flavor.
