1 tablespoon olive oil
1 tablespoon butter
1/4 cup chicken stock (or dry white wine)
Leaves of fresh mixed herbs (such as rosemary, thyme, or sage) (minced)

GRILLED MARINATED SWORDFISH STEAKS WITH AVOCADO BUTTER

Grilled Marinated Swordfish Steaks With Avocado Butter image

Love Swordfish steaks, especially when I can get them fresh. They are nice and firm, and don't have a "fishy" taste! Also love avocado....this is a great marriage of two great tastes! Prep time doesn't include marinating time!

1/3 cup soy sauce (low sodium preferred)
1 teaspoon fresh lemon peel, finely grated
2 teaspoons Dijon mustard
1/2 cup avocado oil or 1/2 cup extra virgin olive oil

SWORDFISH WITH ORANGE, HONEY AND SOY

Swordfish with Orange, Honey and Soy image

Provided by James G. Nichols

Categories     Fish     Soy     Broil     Quick & Easy     Orange     Honey     Bon Appétit     Rhode Island

Yield Serves 4

Number Of Ingredients 8

1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
4 6-ounce swordfish steaks (each about 3/4 inch thick)
Cooked white rice

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your dish. Look for swordfish that is firm and has a mild, fresh smell. Choose ripe avocados that are slightly soft to the touch. Use fresh lemon juice and soy sauce for the best flavor.
  • Marinate the swordfish for at least 30 minutes: This will help to infuse the fish with flavor and make it more tender. You can marinate the fish in the refrigerator for up to 24 hours.
  • Cook the swordfish over medium-high heat: This will help to sear the fish and create a nice crust. Be careful not to overcook the fish, or it will become dry and tough.
  • Make the avocado butter while the fish is cooking: This will ensure that the butter is fresh and creamy when you serve the fish. You can also make the avocado butter ahead of time and store it in the refrigerator for up to 3 days.
  • Serve the swordfish immediately with the avocado butter and your favorite sides: This dish is best served hot, so don't let it sit around for too long before serving.

Conclusion:

Lemon soy swordfish with avocado butter is a delicious and healthy dish that is perfect for a weeknight meal. The swordfish is marinated in a flavorful mixture of lemon juice, soy sauce, and herbs, then cooked to perfection. The avocado butter is a creamy and tangy accompaniment that adds a touch of richness to the dish. This dish is sure to please everyone at your table.
