SOY-LEMON DIPPING SAUCE
Tamari soy sauce is similar to regular soy sauce but is slightly thicker and has a richer flavor. It is available at most grocery stores. Besides being the perfect condiment for Broiled Black-Pepper Tofu, this sauce makes a nice addition to Soba Noodles with Vegetables and Mint -- just drizzle a little bit on top.

Tips:
- For the best flavor, choose fresh and high-quality roughy fillets. Look for fillets that are firm to the touch and have a mild, fresh scent.
- Before cooking the roughy, pat it dry with paper towels. This will help the fish to cook evenly and prevent it from steaming.
- Use a nonstick skillet or pan to cook the roughy. This will help to prevent the fish from sticking to the pan and breaking apart.
- Cook the roughy over medium heat. This will help to cook the fish evenly without overcooking it.
- Baste the roughy with the lemon-soy sauce while it is cooking. This will help to add flavor and keep the fish moist.
- Serve the roughy immediately with your favorite sides, such as rice, vegetables, or mashed potatoes.
