LEMONGRASS SHANDY

Lemongrass Shandy image

When I used to play pro squash in France, I would always have a shandy afterwards. It's incredibly cool and refreshing has just a hint of booze. Depending on what country you are in, a shandy is made with a lager and either lemonade, lemon-lime soda or a great French beverage called Limonad. I'm adding the lemon flavor via a lemongrass syrup and a wedge of lemon. The good news is you could enjoy it without ever touching a squash racket.

GRILLED LEMON SHANDY

Grilling the lemons brings out their aroma and natural sweetness. It also adds a roasty complexity to a super refreshing cocktail.

Yield Makes 6 drinks

Number Of Ingredients 4

6 lemons, halved plus 1 lemon, sliced into 6 rounds
1/2 cup simple syrup (see Note)
1 3/4 cups ice water
Six 12-ounce pilsners

Steps:

  • Light a grill and set it up for direct heat or preheat a grill pan. Oil the grates and grill the halved lemons cut side down over high heat until nicely browned, 4 to 5 minutes. Meanwhile, grill the lemon slices, turning once, until nicely charred on both sides, 4 to 5 minutes. Transfer to a plate and let cool slightly. Squeeze the juice from the halved lemons into a liquid measuring cup until you have about 3/4 cup.
  • In a pitcher, combine the grilled lemon juice with the simple syrup and the ice water. Stir until the lemonade is well chilled.
  • Pour the beers into six large glasses and top each with about ½ cup of lemonade. Garnish with a grilled lemon slice and serve.

Tips:

  • When making the lemon simple syrup, use fresh lemons for the best flavor. You can also use bottled lemon juice, but the flavor will not be as bright.
  • To make the lemon shandies, you can use any type of sparkling water or club soda. If you want a sweeter drink, you can use lemon-lime soda.
  • If you don't have a citrus juicer, you can use a fork to extract the juice from the lemons.
  • Garnish your lemon shandies with a lemon slice or wedge for a refreshing touch.
  • Serve lemon shandies immediately after making them, as the sparkling water will start to lose its fizz over time.

Conclusion:

Lemon shandies are a refreshing and flavorful drink that are perfect for any occasion. They are easy to make and can be customized to your liking. Whether you like them sweet, tart, or somewhere in between, lemon shandies are a delicious way to enjoy the taste of lemons. So next time you are looking for a refreshing drink, give lemon shandies a try!
