ASPARAGUS WITH TOASTED SESAME AIOLI
Here's a great appetizer for springtime entertaining. The bold, toasty sesame oil adds depth to the classic garlic-lemon sauce. Arrange the crisp-tender asparagus spears, tips up, in a tall, clear glass, with the sesame sauce nearby, served in a radicchio leaf cup to add color. The asparagus can be cooked up to 1 day in advance. The sauce will keep for up to 1 week in a covered container in the refrigerator. Bring both to room temperature for serving.

Steps:
- Trim tough ends from asparagus spears. Set spears aside.
- Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
- Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
- Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
- Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.
Tips:
- Choose the right asparagus. Look for asparagus spears that are bright green and firm, with tight tips. Avoid spears that are limp or have woody ends.
- Trim the asparagus. Cut off the tough ends of the asparagus spears, about 1-2 inches from the bottom.
- Cook the asparagus properly. Asparagus can be cooked in a variety of ways, but the most popular methods are steaming, roasting, and sautéing. No matter which method you choose, be sure to cook the asparagus until it is tender but still slightly crisp.
- Don't overcook the asparagus. Overcooked asparagus will become mushy and lose its flavor.
- Season the asparagus well. Asparagus can be seasoned with a variety of herbs and spices, such as lemon, garlic, salt, and pepper. You can also add a drizzle of olive oil or melted butter for extra flavor.
- Serve the asparagus immediately. Asparagus is best served hot or warm, so it is important to serve it immediately after it is cooked.
Conclusion:
Asparagus is a delicious and versatile vegetable that can be enjoyed in a variety of ways. With its bright green color and slightly sweet flavor, asparagus is a great addition to any meal. Whether you are looking for a simple side dish or a more elaborate main course, asparagus is sure to please.
