Steps:
- Cut the peels from the lemons, revealing the flesh. Cut the segments free from the membranes, then dice and place in a bowl. Squeeze any remaining juice from the membranes into the bowl. Set aside.
- Heat a large nonstick pan over medium-high heat. Add 4 tablespoons butter and begin to cook, stirring, until the butter begins to brown. Add the brioche, then reduce the heat to medium-low and cook, continually tossing and swirling the brioche until evenly toasted, about 4 minutes. Remove the croutons to a plate and let cool. Wipe out the pan.
- Sprinkle the fish with salt and pepper. Heat the same pan over medium-high heat. Add 4 tablespoons butter and the oil and begin to cook over the heat, stirring. Add the fish and cook, 2 to 3 minutes. Flip the fish and continue to cook, basting occasionally with the butter from the pan, another 2 to 3 minutes. Remove the fish to a plate. Wipe out the pan.
- Turn the pan to medium heat and add the remaining 4 tablespoons butter. Let melt, then add the capers and cook for 1 to 2 minutes. Continue to cook until the butter browns, then add the wine, lemon juice and segments and parsley. Swirl together. Spoon the sauce over the fish and garnish with the croutons.

Steps:
- Slice the fish fillets into pieces about two-and-a-half inches by one-and-a-half inches (four pieces per fillet).
- Steam the asparagus. While it is cooking, soften the shallots in the butter. Saute the fillets a few at a time, so that they are barely cooked. Do not break when you remove them with a slotted spoon. Keep warm in a very low oven.
- Drain the asparagus spears and keep warm.
- Add the cream, turmeric and lemon juice to the pan in which you have sauteed the fish fillets. Bring to a boil. Add any juices that have collected under the fish fillets. Simmer until thickened, stirring, season with salt and pepper and add the lemon peel. Arrange the fillets on individual plates. Pour the sauce on top, garnish with asparagus and serve.

LEMON SAUCE (FOR FISH)

Steps:
- When I originally wrote this recipe, I really didn't think about the garlic much. I was using peeled garlic. If you use a head of garlic, do yourself a favor: Cut the head in half across the grain, and either use a garlic roaster, or wrap the head in foil tightly and bake for an hour at 250; That will loosen the cloves, and roasting will impart more flavor. Just squeeze each clove into the pan. OR (original instruction) mince the garlic until it's very fine.
- Melt the butter in a small pan.
- Add the minced garlic. brown the mixture.
- Add the flour and whisk to form a roux.
- Add the lemon juice and milk. Continue whisking until the sauce is smooth.
- Hey! you're done! Pour a bit over your fish and enjoy!

Tips:
- Use fresh lemons: Fresh lemons provide the best flavor and aroma for the sauce.
- Zest the lemons before juicing: Zesting the lemons before juicing helps release the essential oils and enhances the flavor of the sauce.
- Use unsalted butter: Unsalted butter allows you to control the amount of salt in the sauce.
- Cook the sauce over low heat: Cooking the sauce over low heat prevents it from curdling.
- Serve the sauce immediately: Lemon sauce is best served immediately after it is made, as it can lose its flavor and texture over time.
Conclusion:
Lemon sauce is a versatile and delicious sauce that can be used to enhance the flavor of a variety of dishes, especially fish. By following these tips, you can make a perfect lemon sauce that will add a bright and zesty flavor to your meals.
