1 cup whole milk ricotta cheese
1/3 cup sour cream
3/4 cup cake flour
3/4 cup buttermilk or 3/4 cup milk
4 large eggs, separated

Steps:

  • In a large bowl, whisk together ricotta, sour cream, butter, vanilla, milk, egg yolks, sugar, cinnamon, salt, and lemon zest until completely homogenized.

1 tablespoon grated lemon zest (just the yellow part of the skin)

  • In a large bowl, whisk together the flour, polenta, baking powder and salt. In a large measuring cup, whisk together the buttermilk, ricotta, lemon zest and eggs. 1/3 cup plus 4 tablespoons sugar, divided
2 tablespoons fresh lemon juice

2 tablespoons baking powder

4 large eggs, separated
2 tablespoons finely grated lemon zest
1 1/2 cups whole milk
