Tips:

  • For the best results, use fresh raspberries. If using frozen raspberries, thaw them completely before using and drain off any excess liquid.
  • To make the lemon curd, use a heatproof bowl set over a saucepan of simmering water. This will help to prevent the curd from curdling.
  • When making the pie dough, be sure to work quickly so that the butter doesn't melt. If the dough becomes too warm, it will be difficult to handle.
  • To make the ribbon effect, spread the lemon curd and raspberry filling in alternating strips across the pie crust. Then, use a knife to gently swirl the fillings together.
  • Bake the pie until the crust is golden brown and the filling is set. This will take about 1 hour.

Conclusion:

This lemon raspberry ribbon pie is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of tart lemon curd and sweet raspberries is sure to please everyone. With its beautiful ribbon effect, this pie is also a feast for the eyes. So next time you're looking for a special dessert, give this lemon raspberry ribbon pie a try. You won't be disappointed!
