Yield Makes 2 loaves

Number Of Ingredients 11

3 cups all-purpose flour (spooned and leveled), plus more for pan
3/4 cup low-fat buttermilk
Zest of 2 lemons, finely grated

2 cups sugar
5 large eggs
Lemon Glaze for Glazed Lemon Pound Cake

Steps:

  • Preheat oven to 350 degrees, with rack in lowest position. Butter and flour two 4 1/2-by-8-inch (6-cup) loaf pans.
  • In a small bowl (or liquid measuring cup), combine buttermilk with lemon zest and juice. In a medium bowl, whisk together flour, salt, baking powder, and baking soda.
  • With an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
  • With mixer on low, add flour mixture in three parts alternately with the buttermilk mixture in two, beginning and ending with flour; beat just until smooth (do not overmix).
  • Divide batter evenly between pans; smooth tops. Bake until a toothpick inserted in centers comes out clean, 50 to 60 minutes (tent with foil if browning too quickly). Cool 15 minutes in pan. Turn out cakes onto a rack; cool completely before glazing.
  • Set rack with cakes over a baking sheet lined with waxed paper. Pour glaze over cakes, letting it run down the sides; let dry, about 30 minutes.

Tips:

  • Use fresh, high-quality lemons for the best flavor. Lemons that are too old or have been refrigerated for too long will not have as much juice or zest.
  • Grate the lemon zest before juicing the lemons. This will help to release the essential oils and give the cake a more intense lemon flavor.
  • Cream the butter and sugar together until they are light and fluffy. This will help to incorporate air into the batter and make the cake lighter and more tender.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the batter from curdling.
  • Stir in the flour and baking powder gradually, until just combined. Overmixing the batter will make the cake tough.
  • Pour the batter into prepared muffin tins and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pans for a few minutes before transferring to a wire rack to cool completely.
  • Dust the muffins with powdered sugar before serving, if desired.

Conclusion:

Lemon pound cake muffins are a delicious and easy-to-make treat that are perfect for any occasion. They are moist and flavorful, with a bright lemon flavor that is sure to please everyone. These muffins are also very versatile and can be dressed up or down depending on the occasion. For a simple snack or breakfast, simply dust them with powdered sugar. For a more elegant dessert, you can glaze them with a lemon glaze or top them with fresh berries.
