LEMON POTS DE CREME

Lemon Pots de Creme image

Make ahead, silky Lemon Pots de Creme are the ideal light and refreshing dessert while still luxuriously creamy and insistently lemony! A must dessert this spring or summer or Easter!

Provided by Jen

Time 1h25m

Number Of Ingredients 6

2 tablespoons lemon zest
3/4 cup fresh lemon juice
3/4 cup granulated sugar (divided)
3-1/2 cups heavy cream
2 teaspoons pure vanilla extract
10 large egg yolks

Steps:

  • Preheat oven to 325°F. Begin boiling a large pot of water that will be used in your water bath. Place 6 4 oz. ramekins in a large roasting pan or baking dish with high sides.
  • In a small saucepan, combine the lemon zest, lemon juice, and 1/4 cup of the sugar. Simmer until reduced to 1/2 cup, about 10-15 minutes; set aside.
  • Meanwhile, in a large saucepan, combine the cream and 1/4 cup of the sugar, and bring to just below boiling. Remove from the heat.
  • In a medium bowl, beat the egg yolks with the remaining 1/4 cup sugar until smooth. Slowly whisk a ladleful of the hot cream into the yolks to temper then slowly/ gradually whisk the yolk mixture into the saucepan with the rest of the cream. Cook (still off heat) stirring constantly, until the mixture reaches 170°F on an instant-read thermometer, 3 to 4 minutes until its thick.
  • Stir in the reserved lemon syrup and vanilla extract. Strain immediately through cheesecloth or a fine sieve then divide the mixture evenly between the ramekins. (I strain mine into a very large pouring measuring cup so I can pour directly after straining - you could also use a pitcher.)
  • Pour enough prepared boiling water into the roasting pan around the ramekins so it reaches halfway up the sides of the ramekins. Lay a long sheet of foil over the ramekins (no need to crimp edges) and bake 30-45 minutes - until the custards are set about ¼ inch from the sides but the center still jiggles. The center of the custards should register 150° to 155°F on an instant-read thermometer.
  • Remove custards from oven and let them cool IN their water bath to room temperature. Remove from water bath, cover with plastic and refrigerate at least 8 hours, best if 24.
  • Garnish with whipped cream and plenty of berries.

TARTELETTES AU CITRON (INDIVIDUAL LEMON TARTS)

Tartelettes Au Citron (Individual Lemon Tarts) image

Provided by Patricia Wells

Categories     dessert

Time 1h45m

Yield Six to eight servings

Number Of Ingredients 5

1 recipe flaky sweet pastry dough (see below)
2/3 cup freshly squeezed lemon juice (the juice of about 4 lemons)
1/2 cup sugar
3 tablespoons creme fraiche or heavy cream
5 large eggs

Steps:

  • Prepare the pastry shells. On a lightly floured surface, carefully roll out the dough to a thickness of one-eighth inch. Fit the pastry into six to eight four-inch tart tins. With your fingertips, carefully press the pastry into the pan and up the side, trying not to stretch it. Trim the overhang, leaving about a half-inch edge. Tuck this overhang inside the pan, pressing gently against the side to create a sturdy, double-sided shell. If you build the pastry a bit higher than the height of the pan, you have less problem with shrinkage. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees.
  • Line the shells carefully with heavy-duty foil, pressing well into the edges so the pastry does not shrink while baking. Tuck the foil into the bottom of the tart shells. Prick the pastry through the foil with the tines of a fork. Fill with weights of rice or beans - making sure you get all the way into the edges - to prevent shrinkage.
  • Place the filled tins on a baking sheet and bake just until the pastry begins to brown around the edges and seems firm enough to stand up by itself, about 15 minutes. Carefully remove the foil and weights and continue baking until evenly light brown, about 10 to 15 more minutes. Watch the pastry carefully, for ovens vary and pastry can brown very quickly. Cool completely, for at least 15 minutes, before filling.
  • Prepare the filling. In a large mixing bowl, combine the lemon juice, sugar and cream and whisk until well blended. Add the eggs, one by one, mixing well after each addition. Strain the lemon cream through a sieve to remove any portions of yolk or impurities.
  • Pour the lemon cream into the prepared tartlet shells, place them on a baking sheet and bake just until the lemon cream is firm in the center, about five more minutes. (Alternatively, to form a single large tart, the dough can be rolled into a 12-inch circle to fit a 10 1/2-inch tart shell. Continue as directed for the individual tarts, but increase baking time by 5 to 10 minutes.)

Tips:

  • Mise en place: Before you start cooking, make sure to measure and prepare all of your ingredients. This will help you stay organized and avoid any mishaps.
  • Use fresh lemons: The fresher the lemons, the better your pots de crème will taste. If you can, try to use organic lemons.
  • Zest your lemons finely: This will help release the oils from the lemon zest and give your pots de crème a more intense flavor.
  • Do not overcook the custard base: The custard base should be cooked slowly and gently, until it has thickened and coats the back of a spoon. If you overcook the custard base, it will become grainy and tough.
  • Strain the custard base: This will help remove any lumps from the custard base and ensure a smooth and creamy texture.
  • Chill the pots de crème thoroughly: The pots de crème need to be chilled for at least 4 hours, or overnight, before serving. This will allow them to set and develop their full flavor.

Conclusion:

Lemon pots de crème are a delicious and elegant dessert that is perfect for any occasion. They are easy to make and can be prepared ahead of time. With their bright citrus flavor and creamy texture, lemon pots de crème are sure to be a hit with your family and friends.
