POPPY SEED VINAIGRETTE

Poppy Seed Vinaigrette image

Provided by Martha Stewart

Categories     Food & Cooking

Yield Makes 3/4 cup

Number Of Ingredients 5

1 tablespoon lemon juice
1 tablespoon balsamic vinegar
4 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 tablespoon poppy seeds

Steps:

  • In a small bowl, whisk together the lemon juice and vinegar. Add the olive oil drop by drop, whisking constantly.
  • Season with salt and pepper. Whisk in poppy seeds. The vinaigrette will keep, tightly covered, in the refrigerator for up to 2 days.

Tips:

  • Use fresh lemon juice: Fresh lemon juice has a brighter, more vibrant flavor than bottled lemon juice. If you don't have fresh lemons on hand, you can substitute bottled lemon juice, but be sure to use 100% lemon juice, not a lemon-flavored juice blend.
  • Toast the poppy seeds: Toasting the poppy seeds brings out their nutty flavor and makes them more fragrant. You can toast poppy seeds in a dry skillet over medium heat for about 5 minutes, stirring constantly. Be careful not to burn them.
  • Use a good quality olive oil: The olive oil you use in your vinaigrette will make a big difference in the flavor of the dressing. Choose a good quality extra virgin olive oil that has a fruity, peppery flavor.
  • Emulsify the dressing: To emulsify the dressing, whisk the oil and vinegar together vigorously until they are well combined and creamy. You can also use a blender or food processor to emulsify the dressing.
  • Taste the dressing and adjust the seasonings: Once you have emulsified the dressing, taste it and adjust the seasonings to your liking. You may want to add more lemon juice, salt, or pepper.

Conclusion:

Lemon poppy seed vinaigrette is a versatile dressing that can be used on a variety of salads, from simple green salads to more complex salads with roasted vegetables or grilled meats. It is also a great marinade for chicken, fish, or shrimp. The bright, citrusy flavor of the lemon and the nutty flavor of the poppy seeds make this dressing a refreshing and flavorful addition to any meal.
