This is a really easy recipe that my mom made before the lemon bar 'rage' was on! Thick-skinned lemons work the best. I suggest using real butter and eggs, I've tried using eggbeaters--nowhere near as good!

Tips:

  • Use fresh lemons. Fresh lemon juice and zest provide the best flavor for lemon pie bars.
  • Don't overmix the dough. Overmixing will make the crust tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help it to hold its shape and prevent it from spreading too much in the oven.
  • Bake the crust until it is golden brown. A golden brown crust will be crisp and flavorful.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.
  • Serve the bars with whipped cream or ice cream. This will add a delicious and creamy touch to the bars.

Conclusion:

Lemon pie bars are a delicious and refreshing dessert that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make the perfect lemon pie bars that will be sure to impress your friends and family.
