Time 1h

Yield 6

Number Of Ingredients 10

1 cup brown rice wild rice mix
2 1/3 cups water (see package instructions)
1/2 teaspoon salt
1/2 cup dried cranberries
1/2 cup chopped pecans (toasted or un-toasted, your choice)
1/4 cup sliced green onions
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
1 teaspoon grated orange peel
Salt and freshly ground pepper

Steps:

  • Make the rice: Use the amount of water for the rice according to instructions on the rice package. Typically straight brown rice is a 1:2 ratio of rice to water. Straight wild rice is a ratio of 1:3 of wild rice to water. For this brown rice wild rice mix that I got from a bin (no package) I used a ratio of 1 cup of rice to 2 1/3 cups of water. Bring rice, 1/2 teaspoon salt, and water to a boil, reduce heat to low, cover and cook for 50 minutes. Do not stir. Do not uncover. Remove from stove and let sit, covered for 10 minutes. Then uncover, fluff up with a fork, and let cool to almost room temperature.

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 13

4 medium zucchini (about 2 pounds 10 ounces total), halved lengthwise
1 cup cooked wild rice or other rice
1 cup halved cherry tomatoes (about 6 ounces)
1 cup shredded mozzarella
1/2 cup pecan halves, chopped
Zest and juice of 1 lemon
1 large egg, beaten
1 cup panko breadcrumbs
1 cup parsley leaves, chopped
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
4 tablespoons olive oil
1 tablespoon honey

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • With a teaspoon, scoop out the flesh from each zucchini half, leaving a 1/4-inch-thick shell. Roughly chop 1 cup of the scooped-out flesh and place in a medium bowl. Discard the remaining flesh or save it for another use. Place the boats on the prepared baking sheet and set aside.
  • Add the rice, tomatoes, mozzarella, pecans, lemon zest, egg, 1/2 cup of the panko, half of the parsley, 1 clove of the garlic, 1 teaspoon salt and a few grinds of black pepper to the bowl and gently fold until combined. Combine 1 tablespoon of the olive oil, the remaining panko and parsley, remaining 1 clove garlic, 1/4 teaspoon of salt and freshly ground black pepper to taste in a small bowl.
  • Spoon the zucchini mixture into the boats, mounding it as needed (see Cook's Note). Sprinkle the breadcrumb mixture evenly over the tops. Bake until the zucchini is softened and the breadcrumbs are golden brown, about 30 minutes. Let cool for 10 minutes on the baking sheet.
  • Meanwhile, whisk the lemon juice, honey, 1/4 teaspoon of salt and a few grinds of black pepper together in a small bowl. Whisking constantly, slowly drizzle in the remaining 3 tablespoons olive oil until emulsified. Drizzle the lemon vinaigrette over the zucchini and serve.

WILD RICE AND TOASTED PECAN PILAF

Wild Rice and Toasted Pecan Pilaf image

Categories     Onion     Rice     Side     Bake     Pecan     Bell Pepper     Gourmet     Wheat/Gluten-Free     Peanut Free     Soy Free     No Sugar Added

Yield Serves 8

Number Of Ingredients 9

1 cup pecan halves, chopped coarse
2 tablespoons unsalted butter, melted
3/4 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1 large onion, halved lengthwise and sliced thin lengthwise
1 yellow bell pepper, cut into julienne strips
1/4 cup olive oil
2 1/2 cups wild rice (about 1 pound), rinsed well in several changes of water and drained
4 1/2 cups chicken broth

Steps:

  • Preheat the oven to 375°F. In a small baking pan toss the pecans with the butter, the thyme, and the salt until they are coated well and toast them in the middle of the oven for 10 minutes, or until they are crisp and fragrant.
  • In a flameproof casserole cook the onion and the bell pepper in the oil over moderately low heat, stirring, for 5 minutes, or until they are just softened, and with a slotted spoon transfer them to a bowl. Add the rice to the casserole and cook it, stirring constantly, for 1 minute. Stir in the broth, heated to boiling, and salt and pepper to taste and bring the mixture to a boil. Bake the mixture, covered, in the middle of the oven for 40 minutes. Stir in the onion mixture, bake the pilaf, covered, for 30 minutes more, or until the rice is tender and the broth has been absorbed, and stir in the pecans.

Tips:

  • Cook the wild rice according to the package instructions. Use a rice cooker or a saucepan with a tight-fitting lid.
  • Toast the pecans in a dry skillet over medium heat until fragrant. This will enhance their flavor and make them crunchy.
  • Use fresh lemon juice for the best flavor. If you don't have fresh lemons, you can use bottled lemon juice, but it won't be as good.
  • Add the lemon zest to the rice for a more intense lemon flavor.
  • Season the rice with salt and pepper to taste.
  • Garnish the rice with fresh parsley or chives for a pop of color and flavor.
  • Serve the rice warm or at room temperature. It's a great side dish for chicken, fish, or roasted vegetables.

Conclusion:

Lemon pecan wild rice is a delicious and easy-to-make side dish that's perfect for any occasion. It's packed with flavor and nutrients, and it's sure to be a hit with your family and friends. So next time you're looking for a new side dish to try, give lemon pecan wild rice a try. You won't be disappointed!
