LEMON MELTAWAYS

Lemon Meltaways image

These tender cookies are an elegant teatime snack, packed with bright lemon flavor. Bake them all at once or save half of the dough, well wrapped, in the freezer for later. If you've frozen the dough, let it warm slightly before slicing to prevent cracked cookies.

Time 30m

Yield About 40 cookies

Number Of Ingredients 8

1 cup/227 grams unsalted butter, softened
2 cups/246 grams confectioners' sugar
1 tablespoon packed finely grated lemon zest
2 tablespoons fresh lemon juice
1 egg yolk
2 cups/255 grams all-purpose flour
1/4 cup/32 grams cornstarch
1/2 teaspoon kosher salt

Steps:

  • Add butter, 1 1/4 cups/154 grams confectioners' sugar, and lemon zest to the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until the sugar is moistened, then turn the mixer to medium-high and beat until light and fluffy, about 3 minutes. Scrape down the sides of the bowl, and add the lemon juice and egg yolk. Mix to combine.
  • Reduce the speed to low, add the flour, cornstarch and salt, and mix until just combined.
  • Divide the dough into 2 pieces and set each piece on a length of parchment paper or plastic wrap. Fold the paper over the sticky dough, and use your hands to form it into a cylinder about 1 1/2 inches wide. Roll the cylinder a few times to help shape it, but don't worry if it isn't perfect. Chill the dough until completely firm, at least 2 hours.
  • When you are ready to bake, heat oven to 350 degrees, and line two baking sheets with parchment paper.
  • Slice the dough into rounds just under 1/4-inch thick and arrange them at least 1-inch apart on the prepared baking sheets. Bake the cookies for 12 to 17 minutes, rotating the pans from top to bottom and front to back halfway though. The cookies should be golden around the edges, but not brown all of the way through.
  • Set the pans on cooling racks and cool for a few minutes. Dust both sides of the warm cookies with the remaining 3/4 cup/92 grams confectioners' sugar. Let the cookies cool completely, then store at room temperature in an airtight container. Dust with additional confectioners' sugar just before serving, if desired.

1 cup white sugar
½ cup butter, softened
2 tablespoons fresh lemon zest
2 eggs
1 tablespoon fresh lemon juice
½ teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup powdered sugar

Steps:

  • Cream sugar, butter, and lemon zest together in a large bowl using an electric mixer until light and fluffy, about 3 minutes.

LEMON MILLET COOKIES RECIPE - (4.3/5)

Lemon Millet Cookies Recipe - (4.3/5) image

Provided by Mom_s

Number Of Ingredients 11

Ingredients
250 g softened butter
1 c raw sugar
1/2 c unrefined brown sugar
2 eggs
1 1/2 c unbleached plain flour
3/4 c millet flour
1/2 c whole wheat flour
1 tsp baking soda
zest of 2 lemons
juice of 1 lemon

Steps:

  • 1. Preheat the oven to 180C (375F). Line cooking sheets with baking paper (if needed). 2. Using a hand mixer, mix the softened butter and sugars until creamy. Add the eggs, one at a time, mixing only until they're combined. 3. Add the rest of the ingredients, and stir with a spatula or spoon until everything is uniformly mixed. 4. Roll the dough into 2.5 cm (1 in) balls and line them up on the cookie sheet, with at least 2.5 cm between them. Use a fork to slightly flatten the top of each*. *If the dough is sticking to your hands, and not rolling easily in your palms - give it a rest. Cover the bowl and pop it into the fridge for 30 min. Then try again. 5. Bake in the preheated oven for about 12 min, until the cookies are nice and golden and aren't completely squishy when you touch them. Take the cookies out of the oven and let them cool on the baking sheet for about 10 min, before transferring them to a wire rack. These will keep in an airtight container for 5-7 days ... or you can freeze them!

LEMON CRINKLE COOKIES

Lemon Crinkle Cookies image

These cookies are bright with sweet lemony flavor, thanks to plenty of lemon zest, lemon juice and a generous coating of confectioners' sugar. The key to success with these cookies is chilling the dough before rolling it into balls. This helps slow down the spreading, giving the tops a chance to crinkle and crack during baking. Tossing the chilled dough balls in granulated sugar before coating in confectioners' sugar also helps the coating adhere, so the cookies are sweet and crunchy on the outside and soft and chewy inside.

Time 3h40m

Yield 24 cookies

Number Of Ingredients 9

2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg
2 tablespoons finely grated lemon zest, plus 1/4 cup lemon juice (about 2 medium lemons)
6 to 8 drops yellow food coloring, optional (for brighter yellow color)
1/2 cup confectioners' sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat 1 cup of the granulated sugar and the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
  • Add the egg and beat until incorporated. Add the lemon zest, lemon juice and food coloring if using and beat until incorporated. Reduce the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
  • Line 2 baking sheets with parchment. Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl. Using a 1-tablespoon scoop, portion the dough and roll into balls. Toss each ball in the granulated sugar, then in the confectioners' sugar, coating it generously and thoroughly. Arrange the balls about 1 inch apart on the prepared baking sheets (you should have 24 balls). Refrigerate for 20 minutes.
  • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for 5 minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.

Tips:

  • Ensure the millet is finely ground into a flour consistency. This will help the cookies achieve a smooth texture.
  • Use fresh lemon zest for the best flavor. You'll need about 1 tablespoon of zest, which is the equivalent of 1-2 lemons.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Don't overmix the cookie dough. Overmixing can result in tough cookies.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape better.
  • Bake the cookies until the edges are golden brown and the centers are set. Overbaking can result in dry cookies.

Conclusion:

These lemon millet cookies are a delicious and healthy snack or dessert. They're made with simple ingredients and are easy to make. The cookies are gluten-free, dairy-free, and refined sugar-free, making them a great option for people with dietary restrictions. The cookies are also a good source of fiber and protein, making them a filling and satisfying snack.
