1 quart vanilla ice cream, softened, divided
1 jar (10 ounces) lemon curd
2 tablespoons lemon juice
MERINGUE:
4 egg whites
6 tablespoons sugar
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 400°. Combine cracker crumbs, pecans, sugar and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. 1/2 cup brown sugar
4 tablespoons butter, melted
8 egg yolks
2 cups buttermilk
1 1/2 cups Mexican crema
2 cups granulated sugar
2 tablespoons vanilla paste
1 teaspoon kosher salt
8 lemons, zested
3 lemons, juiced
1 teaspoon chile powder
6 egg whites
1/4 cup granulated sugar

Steps:

  • For the pretzel crust: Preheat the oven to 350 degrees F. Combine the pretzels, brown sugar and melted butter in a food processor; pulse until finely ground. Press the crust evenly into 5-inch pie molds. Bake for 4 minutes. Let cool completely.
