1 pound baby carrots
water to cover
¼ cup butter
2 ½ tablespoons honey
1 tablespoon lemon juice
⅛ teaspoon ground ginger

1 pound carrots, peeled
pinch coarse salt
1 strip lemon zest
juice from 1/2 Lemon (or to taste)
1 tablespoon honey
freshly ground black pepper
