LEMON MERINGUE PARFAIT

Lemon meringue parfait image

Need an easy dessert for a dinner party? Try this lemon meringue parfait. You can make it ahead of time and put it in the freezer until you're ready to serve

Provided by Orlando Murrin

Categories     Dessert

Time 4h20m

Number Of Ingredients 6

75g meringue nests (5 nests)
450ml double cream , chilled
1 tbsp caster sugar
1 lemon , zested
2-3 tbsp gin or vodka
5 tbsp of lemon curd , plus extra to drizzle

Steps:

  • Line a 20cm round tin, preferably loose-based, with cling film, using more than one piece if necessary to cover the bottom and up the sides, and pop in the freezer.
  • Roughly break up the meringues with your fingers into a bowl, aiming for nothing bigger than a golf ball.
  • Put the cream and sugar in a large bowl and whisk until starting to stiffen. Stop when it looks floppy, like Greek yogurt.
  • Grate over the lemon zest and sprinkle over the gin and meringue rubble. Use a large spoon or spatula to fold the cream up, over and round, until just combined.
  • Stir the lemon curd so it's gloopy rather than firm; if it remains too thick, dilute with a tsp of gin. Dollop over the surface of the cream. Take your spoon and fold it in, turning the bowl as you do so - no more than a dozen folds, so the curd forms streaks. Spoon gently into the tin and freeze for at least four hours. Once firm, cover with cling film.
  • About 10-20 mins before serving, remove the parfait from the freezer, invert onto a plate, peel away the cling film, and return right-side-up, at room temperature. Serve in wedges with lemon curd drizzled over and the fruit on the side.

Yield Makes 6 servings

Number Of Ingredients 21

Lemon curd:
6 tablespoons (3/4 stick) unsalted butter
2/3 cup sugar
1/2 cup fresh lemon juice
2 tablespoons finely grated lemon peel
2 tablespoons heavy whipping cream
Pinch of salt
2 large eggs
3 large egg yolks
Blackberry compote:
2 cups fresh blackberries (about 12 ounces)
3 tablespoons sugar
2 tablespoons limoncello
1 teaspoon finely grated lemon peel
Assembly:
4 ounces gingersnap cookies (about 16)
1 1/2 cups chilled heavy whipping cream
1/3 cup mascarpone cheese
Pinch of salt
Even easier: High-quality purchased lemon curd can be used in place of homemade.
Ingredient info: Limoncello is an Italian lemon liqueur available at many supermarkets and at liquor stores. Mascarpone, an Italian cream cheese, is sold at supermarkets and Italian markets.

Steps:

  • For lemon curd:
  • Melt butter in heavy large saucepan over medium heat. Remove from heat; whisk in sugar, lemon juice, lemon peel, cream, and pinch of salt. Add eggs and egg yolks; whisk to blend. Cook over medium-low heat until thick enough for mixture to leave path on back of spoon when finger is drawn across, stirring constantly, 6 to 7 minutes (do not boil). Strain into medium bowl. Cover with plastic wrap, pressing directly atop lemon curd. Chill at least 8 hours or overnight.
  • For blackberry compote:
  • Toss all ingredients in medium bowl to coat, lightly crushing some of berries to release juices. Cover and chill until sugar dissolves and juices form, about 3 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • For assembly:
  • Place cookies in large resealable plastic bag. Crush cookies with mallet or rolling pin until largest pieces are about 1/2 inch. Using electric mixer, beat cream, mascarpone, and pinch of salt in large bowl just until peaks form. Arrange six 8-ounce parfait glasses or compote cups on work surface. Spoon 4 to 5 berries and some of juices in bowl into each cup. Cover and chill remaining berries in bowl for serving. Spoon 1/4 cup mascarpone whipped cream over berries in each cup, spreading in even layer. Add generous 1 tablespoon curd, spreading to edges. Sprinkle 1 tablespoon crushed gingersnaps over. Repeat layering 1 more time with mascarpone whipped cream, lemon curd, and crushed gingersnaps. Top with remaining cream. Cover; chill desserts at least 1 hour and up to 3 hours.
  • Uncover desserts. Spoon remaining berry mixture over and serve.

Tips:

  • Prep ahead: To save time, make the ginger syrup and lemon curd ahead of time. They can be stored in the refrigerator for up to a week.
  • Use fresh ginger: For the best flavor, use fresh ginger. Peel and grate it just before using.
  • Don't overcook the ginger syrup: The ginger syrup should be slightly thickened, but not too thick. If it gets too thick, add a little water and stir until desired consistency is reached.
  • Chill the parfait before serving: This will help the layers set and make the parfait easier to eat.
  • Garnish with fresh mint or lemon zest: This will add a pop of color and flavor to the parfait.

Conclusion:

This lemon ginger crunch parfait is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be tailored to your liking. Whether you prefer a tart or sweet parfait, this recipe has you covered. So next time you are looking for a healthy and satisfying dessert, give this lemon ginger crunch parfait a try.
