1 lb medium shrimp, peeled and deveined
3 -4 tablespoons olive oil
2 tablespoons minced garlic
1/2 teaspoon dried red pepper flakes, to taste
2 tablespoons dry white wine
2 tablespoons fresh lemon juice
1 tablespoon finely grated lemon, zest of
1 tablespoon minced fresh parsley
1 teaspoon paprika
2 tablespoons minced shallots
1 teaspoon finely grated lemon, zest of
2 tablespoons fresh lemon juice
5 tablespoons extra virgin olive oil, to taste
salt & freshly ground black pepper
1 head red leaf lettuce or 1 head green leaf lettuce, rinsed,dried and torn into pieces
4 ounces manchego cheese (or Parmesan or asiago)
chopped fresh parsley (to garnish)
cracked black pepper (to garnish)
