Steps:
- Preheat the oven to 425 degrees F.
- Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.
- Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.
- Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half.
- Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.

Steps:
- Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. When the oil is heated, add the broccoli, flat sides down, in an even layer, and sprinkle with 1/2 teaspoon salt. Let the broccoli cook undisturbed for 2 minutes. Flip the broccoli and continue cooking until the broccoli is tender-crisp, an additional 2 to 3 minutes. Remove the broccoli to a plate and set aside.
- Turn the heat down to low and add 1/2 tablespoon olive oil. Add the garlic, shallot and chile flakes and cook, stirring frequently, until tender, 2 to 3 minutes. Turn off the heat and add the lemon zest and juice and stir to combine.
- Spoon the lemon-shallot mixture over the broccoli and serve.
ROASTED GARLIC LEMON BROCCOLI
I was looking for a unique way to prepare broccoli and decided to give this a try! Florets are roasted after being tossed in olive oil and sprinkled with sea salt, freshly ground black pepper, and minced garlic. A squeeze of lemon juice before serving seals the deal.

Tips:
- For a crispy and flavorful chicken, ensure the bird is dry before roasting. Pat it dry with paper towels inside and out.
- The combination of olive oil, lemon juice, garlic, and herbs is a classic flavor enhancer for chicken. Don't be afraid to use generous amounts of these ingredients.
- To achieve an evenly cooked chicken, roast it at a high temperature for a short time, then reduce the heat to finish cooking.
- To prevent the vegetables from drying out, toss them with a little olive oil and sprinkle with salt and pepper before roasting.
- If you don't have sweet potatoes on hand, you can substitute them with regular potatoes or parsnips.
- For a smoother sweet potato mash, use a potato ricer or food mill to remove any lumps.
- Serve the roasted chicken with the charred broccoli, sweet potato mash, and a side of lemon wedges.
Conclusion:
This lemon garlic roast chicken with charred broccoli and sweet potato mash is a delicious and satisfying meal that is perfect for any occasion. The chicken is succulent and flavorful, the vegetables are roasted to perfection, and the sweet potato mash is creamy and comforting. It's a well-balanced meal that is sure to please everyone at the table.
