Provided by The Mediterranean Dish

Categories     Side Dish

Time 45m

Number Of Ingredients 10

2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

FRIED RICE AND BEANS (GALLO PINTO)

Fried Rice and Beans (Gallo Pinto) image

My dad's black bean recipe. He is from Costa Rica. I eat these 4 different ways: as "gallo pinto," plain rice and beans for a side dish, as black bean soup, or mash them to make a dip. Serve gallo pinto with a fried egg and bacon.

Time 2h30m

Yield 1

Number Of Ingredients 8

1 pound dry black beans
2 cloves garlic, mashed
1 bay leaf
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon oil, or as needed
2 tablespoons finely chopped onion
1 ½ cups cooked rice

Steps:

  • Go through beans and pick out any with holes or rocks. Transfer beans to a large container and cover with several inches of cool water; let soak for at least 1 hour, or overnight.
  • Rinse beans and dump water out. Transfer to a large pan and cover with fresh water by 2 inches. Add garlic and bay leaf and bring to a boil. Reduce to a simmer and cook until tender, about 1 hour, adding oregano and salt during the last few minutes. Reserve a few spoons of "caldo" (cooking juice) as it cooks.
  • Measure 1/2 cup cooked beans for gallo pinto and reserve remaining beans for another use.
  • For one serving of gallo pinto: Heat oil in a skillet over medium-low heat. Add onion and saute until dark but not burned, 8 to 10 minutes. Add 1/2 cup cooked black beans along with 2 to 3 tablespoons "caldo." Stir in rice and cook until it starts to get crispy 3 to 5 minutes.

LEMON AND GARLIC RICE

Lemon and Garlic Rice image

I love the flavours of lemon and garlic combined in this healthy dish. This would be a good choice served with chicken or fish.

Provided by Shuzbud

Categories     Long Grain Rice

Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 6

1 tablespoon olive oil
4 garlic cloves, minced
2 tablespoons fresh lemon juice (about half a small lemon)
1 cup long grain white rice
2 cups chicken stock (I use 2 stock cubes and 2 cups hot water)
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat the oil in a pan over a medium heat.
  • Add the garlic cloves and cook for 1 minute.
  • Add the lemon juice and cook for a further minute.
  • Add the rice to the pan and stir to coat the rice with the liquid mixture, being careful not to burn the rice.
  • Add the chicken stock (or crumble in the stock cubes and add boiling water), stir and cover to cook, turning down the heat.
  • Check on the rice while cooking to ensure it does not run out of liquid and boil dry.
  • After 20 minutes, remove the lid and stir. The rice should still have a little too much liquid at this stage so cook uncovered until the rice is done and the liquid is all absorbed.
  • Mix in the chopped fresh parsley and serve hot!

Tips:

  • Use day-old rice: Day-old rice is less likely to clump together and will result in a fluffier fried rice.
  • Chop your vegetables and protein evenly: This will ensure that they cook evenly.
  • Use a large skillet or wok: A large skillet or wok will allow you to easily stir-fry the rice and vegetables.
  • Cook the rice and vegetables in batches: If you are cooking a large batch of fried rice, cook the rice and vegetables in batches to prevent overcrowding the skillet or wok.
  • Add the sauce gradually: Add the sauce gradually and stir constantly to prevent the rice from becoming too wet.
  • Garnish with fresh herbs: Garnish the finished dish with fresh herbs such as cilantro, parsley, or green onions for extra flavor and color.

Conclusion:

Lemon garlic fried rice and beans is a flavorful and easy-to-make dish that is perfect for a quick and easy meal. With its combination of tangy lemon, savory garlic, and hearty beans, this dish is sure to please everyone at the table. Whether you are looking for a vegetarian main course or a flavorful side dish, lemon garlic fried rice and beans is a great option. So next time you are looking for a quick and easy meal, give this recipe a try!
