8 chicken thighs, skinned

3 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
1 tablespoon lemon zest
2 cloves garlic, minced
2 teaspoons Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
2 pounds boneless, skinless chicken thighs
1 1/2 tablespoons canola oil

  • CHICKEN STOCK MIXTURE: In a medium bowl, combine chicken stock, lemon juice, olive oil, lemon zest, garlic, Dijon, oregano, thyme, 1 1/2 teaspoons salt and 1 1/2 teaspoons pepper. In a gallon size Ziploc bag or large bowl, combine chicken and CHICKEN STOCK MIXTURE; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. 4 (8 ounce) skin-on, bone-in chicken thighs

1 3/4 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 cup all-purpose flour
1/4 cup olive oil
3 cups thinly sliced onions
30 cloves (about 2 heads) garlic, peeled and smashed
1/2 teaspoon crushed red pepper
1 bay leaf
1/2 cup freshly squeezed lemon juice
1 1/2 cups chicken broth
1 pound angel hair pasta
3 tablespoons chopped fresh parsley leaves, plus more for garnish
3 tablespoons unsalted butter
