MELT-IN-YOUR-MOUTH LEMON DROP COOKIES
The addition of cornstarch to these cookies really makes them melt in your mouth! The fact that they are egg-free makes them good for those allergic to eggs, and since the cookies are little, it is easy to eat a bunch - unfortunately... :) These are a nice addition to a summer BBQ, a baby shower, or any get-together. These can be made with any citrus fruit, but we like lemon the best!

LEMON DROP COOKIES
This is one of our favorite Christmas cookie recipes. It's a buttery cookie with a tart lemon curd in the center. The only drawback - they don't stack very well due to the lemon curd filling. But they don't last that long anyway in our house!! My kids love them. Note: serving size is 2 cookies.

COCONUT LEMON DROP COOKIES
Was wanting to find a recipe that used lemon pudding and just couldn't find the right one that suited me, so I came up with this one on a whim. It smelled so yummy and the texture is tender and chewy. It is not overly sweet and the coconut adds a bit of crunch. Please try them and let me know what you think. Store in an airtight container.

Steps:
- 1. Preheat oven to 375 degree F. In a bowl, combine sugar, shortening, salt and food coloring. Blend thoroughly. Add remaining ingredients, mix well. I lightly floured a surface on my counter to roll the cookies and cut with a biscuit cutter. Recipe states to just roll small portions at a time. Like I said in description of recipe, I got lazy and made drop cookies as well, using my small cookie scoop ( about 1 tbsp. ) I sprayed a sheet pan, it didn't call for that, but I always do. Place on sheet, about 1 inch apart. Recipe states to sprinkle with sugar if desired. I didn't, as I used my lemon glaze. Bake for 8 - 10 minutes. Remove cookies from pan, cool on rack and frost if desired. I think the addition of my glaze really put these over the top.
- 2. Glaze : Place all ingredients in a medium bowl. Whisk until smooth If needs thinned, either add more juice or milk. If needs to be thicker, add more sugar.
- 3. Spread over cooled cookies. I sprinkled mine with yellow sugar crystals.

Tips:
- To ensure the best flavor and texture, use fresh lemons. If you don't have fresh lemons on hand, you can substitute bottled or frozen lemon juice. However, fresh lemon juice will provide the best results.
- Use unsalted butter to control the amount of salt in the cookies. If you only have salted butter, you can use it but omit the additional salt called for in the recipe.
- Roll the dough into small balls before coating them in sugar. This will help the sugar stick to the cookies and create a nice crust.
- Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
- Let the cookies cool completely on a wire rack before serving. This will help them set and firm up.
Conclusion:
Lemon drop cookies are a classic treat that is perfect for any occasion. They are easy to make and always a hit with both kids and adults. With their bright citrus flavor and soft, chewy texture, these cookies are sure to be a favorite in your household. So next time you are looking for a delicious and easy-to-make cookie recipe, give lemon drop cookies a try. You won't be disappointed!
