1/2 cup minced shallots
1 teaspoon minced garlic
1/2 cup dry white wine
Juice of one lemon
1/4 cup chopped fresh dill
1 teaspoon Dijon mustard
1/2 cup heavy cream
5 tablespoons unsalted butter, cubed
Salt and pepper
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a saucepan, combine the shallots, garlic, wine, and lemon. Bring the liquid up to a boil. Stir in the dill and cook for 3 minutes. Whisk in the mustard and cream, continue to cook for 2 minutes. Whisk in the butter a cube at a time, until all the butter is incorporated. Season with salt and pepper. Place the grilled vegetables on the platter. Lay the cakes directly on top of the vegetables. Drizzle the sauce over the cakes. Garnish with the sizzled leeks and Essence.

¼ cup butter, melted
¼ cup white wine
1 lemon, juiced
5 cloves garlic, chopped
1 bunch fresh dill, stems trimmed
1 (1 pound) salmon fillet
½ cup toasted almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.

4 (5 ounce) salmon fillets
5 tablespoons fresh lemon juice, divided
¾ teaspoon dried dill weed
¾ teaspoon lemon pepper
10 tablespoons butter, divided
1 shallot, minced
1 tablespoon white wine vinegar
5 tablespoons white wine, divided
½ cup heavy cream
½ cup milk
½ teaspoon dill weed
1 teaspoon parsley
1 teaspoon dried thyme
salt and white pepper to taste

Steps:

  • Place salmon in a shallow dish, and rub with 3 tablespoons lemon juice. Season with dill weed and lemon pepper. Cover, and allow to stand 10 to 15 minutes.
  • Heat 2 tablespoons butter in a saucepan over medium heat, and saute shallot 2 minutes, until tender. Mix in remaining lemon juice, vinegar, and 1/4 cup wine. Simmer until reduced by at least 1/2. Stir in cream and milk. Season with dill, parsley, thyme, salt, and white pepper. Cook and stir until thickened. Whisk in 1/4 cup butter. Set aside and keep warm.
  • Heat remaining 1/4 cup butter in a skillet over medium heat. Place salmon in the skillet, skin side up, and cook 1 to 2 minutes, until seared. Set salmon aside. Deglaze the skillet with remaining 1 tablespoon wine, then mix in the cream sauce. Return salmon to the skillet, and cook 8 minutes in the sauce, or until easily flaked with a fork. 2 tablespoons chopped fresh dill
2 teaspoons lemon zest
1 tablespoon extra-virgin olive oil

1/4 cup buttermilk

3 tablespoons butter
1 green onion, finely chopped
2 tablespoons finely chopped red bell peppers
1 garlic clove, minced
3 tablespoons heavy cream
1 tablespoon Dijon mustard
1 egg
1/2 teaspoon minced fresh parsley
cayenne pepper
1 cup breadcrumbs
1/4 cup grated parmesan cheese
1 lb crabmeat (white or claw crabmeat, picked free of any bits of shell)
2 tablespoons vegetable oil

Steps:

  • To make the sauce, combine all of the ingredients in a bowl and stir well. Refrigerate until chilled.
  • The sauce will thicken as it chills.
  • To prepare the crab cakes, melt 1 tablespoon of butter in a heavy skillet over medium heat.
  • Saute the onion, bell pepper, and garlic until the pepper is limp, approximately 3 minutes.
  • Add the cream, mustard, 1 egg, parsley, cayenne pepper and 1/2 cup bread crumbs, to taste, and mix well.
  • Gently fold in the crabmeat.
  • Form the mixture into 8 patties, about 1/2-inch thick.
  • In a mixing bowl, combine the remaining 1/2 cup of bread crumbs with the Parmesan.
  • Pat this topping onto both sides of the patties.
  • Refrigerate until firm, about 2 hours.
  • Using a skillet, combine the oil and remaining 2 tablespoons of butter.
  • Saute the crab cakes in the hot oil-butter mixture for approximately 3 minutes on each side or until golden brown.
  • These crab cakes can also be baked for 7 to 10 minutes in a 400 degree F oven.
  • To serve, spoon a dollop of the lemon dill sauce along side each crab cake.
  • **Cook time doesn't include refrigeration of the crab cakes for approximately 2 hours to let them firm up.

4 center-cut salmon steaks, 3/4-1-inch thick
2 whole lemons
fresh dill sprig
1 1/2 tablespoons butter
1 1/2 teaspoons cornstarch
1/2 cup cold water
1/3 cup fresh lemon juice
1 tablespoon snipped fresh dill
1/4 teaspoon salt
1/8 teaspoon dried chervil, can sub parsley (optional)
1 dash cayenne pepper (optional)
3 slices lemons, unpeeled and cut into quarters

  • In small saucepan, melt butter over medium high heat, remove from heat when melted.
  • Combine cornstarch with water and stir into butter.

  • Turn steaks over carefully and cook an additional 5-7 minutes or to desired doneness.
  • Fish should flake easily with a fork.
  • Remove from grill and place on heated serving platter.

12 small red potatoes (1 pound)
2 fresh dill sprigs
2 tablespoons butter
1 tablespoon all-purpose flour
1/2 cup half-and-half cream
2 tablespoons snipped fresh dill
1 tablespoon lemon juice
1/8 teaspoon salt

Steps:

  • Place potatoes and dill sprigs in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain, reserving 1/2 cup cooking liquid. Transfer potatoes to a serving bowl; keep warm. , In a small saucepan, melt butter. Stir in flour until smooth; gradually add cream and reserved cooking liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the snipped dill, lemon juice and salt; pour over potatoes and toss to coat.

1 wild caught salmon fillet or whole salmon 2 lbs.
2 lemons
1/2 Tbsp fresh dill
2 Tbsp extra virgin olive oil
4 Tbsp fresh unsalted butter
salt and pepper, to taste

Steps:

  • 1. Season the salmon with salt and pepper. Add the olive oil to your pan. I love using cast iron for this dish. It can go from stove top to oven. Bring it up to heat.
  • 2. When the pan is heated lay the fish skin side down. The salt and pepper will create the crispiness on the skin. When you see the flesh becoming opaque and you see the skin curling on the sides it's time to turn it.
  • 3. Cook other side to your liking. Remember if you like your salmon medium rare, remove when the middle is just about warmed through the residual heat will cook it to perfection.
  • 4. Add the butter, the juice of the one lemon, and minced the dill. Heat it through then spoon over the fish. Thinly slice the remaining lemon. You can lay on the side this gives it a wonderful aroma. This can be served with some creamy warm Colcannon. Enjoy!

2 orange roughy fillets
6 ounces heavy cream
1 lemon, juice of
1 pinch freshly chopped dill
1 tablespoon flour
salt and pepper
2 tablespoons vegetable oil

  • Pat dry the orange roughy fillet, season it lightly with salt and pepper and dredge it in the flour.
  • Heat the oil in a non-stick pan and fry the orange roughy on both sides until lightly golden.
