Time 45m

Yield 30 serving(s)

Number Of Ingredients 8

1 1/2 cups flour
1/2 cup powdered sugar
3/4 cup cold margarine
4 large eggs, slightly beaten
1 1/2 cups sugar
1 teaspoon baking powder
1/2 cup lemon juice concentrate (such as ReaLemon)
3/4 cup flaked coconut

Steps:

  • Preheat oven to 350°F degrees.
  • Lightly grease a 13x9 baking pan; set aside.
  • In a medium bowl, combine flour& powdered sugar; cut in margarine with pastry blender until crumbly.
  • Press mixture into bottom of prepared 13x9 pan & bake for 15 minutes.
  • Meanwhile in a large bowl, combine eggs, sugar, baking powder & lemon juice.
  • Pour over crust and top with coconut.
  • Bake 20 minutes or until golden.
  • Cool completely & cut into bars.
  • Store in refrigerator.
  • NOTE: For plain lemon bars, omit coconut & add 3 Tbsp flour to egg mixture, and proceed as above.

Tips:

  • Use fresh lemons: Fresh lemon juice and zest provide the best flavor for lemon curd bars. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be less bright.
  • Don't overcook the lemon curd: The lemon curd should be thick and spreadable, but not too thick. Overcooked lemon curd will be grainy and tough.
  • Use a water bath to bake the bars: A water bath helps to prevent the bars from overcooking and becoming dry. It also helps to create a smooth, creamy texture.
  • Chill the bars before serving: The bars are best served chilled. This allows the flavors to meld and the texture to firm up.
  • Garnish with coconut: Shredded coconut adds a delicious flavor and texture to the bars. You can also sprinkle the bars with powdered sugar or drizzle them with lemon glaze.

Conclusion:

These lemon curd bars with coconut are a delicious and easy-to-make dessert. They are perfect for any occasion, from a casual get-together to a formal dinner party. The combination of tangy lemon curd and sweet coconut is sure to please everyone. So next time you're looking for a special dessert, give these bars a try. You won't be disappointed!
