LEMON CURD (BAREFOOT CONTESSA) RECIPE

Lemon Curd (Barefoot Contessa) Recipe image

Provided by AnneS

Number Of Ingredients 6

3 lemons
1 1/2 cups sugar
1/4 pound unsalted butter (room temperature)
4 Extra large eggs
1/2 cup lemon juice (3-4 lemons)
1/8 teaspoon kosher salt

Steps:

  • 1. Using a carrot peeler, remove the zest of 3 lemons, being careful to avoid the white pith. Put the zest in a food processor fitted with a steel blade. Add the sugar and pulse until the zest is very finely minced into the sugar. 2. Cream the butter and beat in the sugar and lemon mixture. Add the eggs, one at a time, and then add the lemon juice and salt. Mix until combined. 3. Pour the mixture into a 2 quart saucepan and cook over low heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken at about 170 degrees, or just below simmer. Remove from the heat and cool or refrigerate.

Tips:

  • Use fresh lemons. Fresh lemons will give your lemon curd bars the best flavor. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will not be as good.
  • Don't overcook the lemon curd. The lemon curd should be thick and spreadable, but it should not be too thick or it will be difficult to spread on the crust.
  • Let the lemon curd bars cool completely before cutting them. This will help prevent them from falling apart.
  • Serve the lemon curd bars with fresh berries or whipped cream. This will add a delicious finishing touch to the bars.

Conclusion:

Lemon curd bars are a delicious and easy-to-make dessert that is perfect for any occasion. They are made with a simple shortbread crust and a creamy, tangy lemon curd filling. The bars are then baked until the crust is golden brown and the lemon curd is set. Lemon curd bars are a great way to use up extra lemons, and they are also a popular gift item. If you are looking for a delicious and easy-to-make dessert, lemon curd bars are a great option.
