LEMON CRINKLE COOKIES
If you like lemon and you like cookies, this recipe is for you! I discovered it on Pinterest and it won the "Top Cookie Award" on an LDS food blog. I've been baking and making cookies for 40 years and haven't stumbled upon a better cookie than this one. It's very refreshing and light, but the texture is what really makes this cookie stand out. Crunchy on the outside and just the right chewy softness on the inside. Wonderful!

Steps:
- Preheat oven to 350 degrees. Grease light colored baking sheets with non-stick cooking spray and set aside.
- In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
- Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
- *If using a non-stick darker baking tray, reduce baking time by about 2 minutes. Don't overbake!

Steps:
- 1. Mix the first three ingredients in large bowl. Batter will be sticky and thick. I have also squeezed a wedge of lemon or two into this for more lemony flavor.
- 2. Form dough and take by teaspoonfuls and roll in powdered sugar. Place on cookie sheet. (I sprayed with oil, but recipe didn't call for it) Leave a good space between them, they really grow when they are baked!
- 3. Bake in 350 degree oven till edges get golden. Recipe she gave said 8-10 minutes but I thought it needed to bake longer than that. Try about 15 minutes.
- 4. Let rest for about a minute in the pan, then put on wire rack to cool. Enjoy!

Steps:
- Cream shortening and brown sugar until fluffy; add egg and lemon rind, beating well.
- Combine flour, baking soda, cream of tartar, ginger, and salt; stir into creamed mixture.
- Roll dough into 1-inch balls; roll each in sugar.
- Place 2 inches apart on ungreased cookie sheet.
- Bake at 350 degrees for 10-12 minutes.
Tips:
- For the best results, cream together the butter and sugar until light and fluffy. This will help to create a soft and chewy cookie.
- Be sure to chill the dough for at least 30 minutes before baking. This will help to prevent the cookies from spreading too much.
- Roll the dough balls in powdered sugar before baking. This will give the cookies a crinkly texture and a sweet, citrusy flavor.
- Bake the cookies until the edges are just beginning to brown. Overbaking will result in dry, crumbly cookies.
- Let the cookies cool on a wire rack before storing them in an airtight container. This will help to keep them fresh and prevent them from becoming soggy.
Conclusion:
Lemon crinkle cookies are a classic treat that is perfect for any occasion. They are easy to make and always a crowd-pleaser.
