With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. Number Of Ingredients 13

3 cups Israeli (pearl) couscous, whole-wheat or regular
1 1/2 teaspoons cumin seeds
2 tablespoons sherry vinegar or white wine vinegar
3/4 teaspoon coarse kosher salt, more to taste
1/2 teaspoon black pepper
3/4 cup chopped dried apricots
3/4 cup torn fresh mint leaves
2/3 cup coarsely chopped fresh dill

Add to a bowl with the warm couscous, vinegar, salt and pepper and toss well. When the couscous is cool, add remaining ingredients and mix well. Taste and add more salt, lemon juice or oil if needed. Garnish with pistachio nuts if desired.

1 teaspoon olive oil or 1 teaspoon roasted garlic oil
2 cups spinach, chopped
1 tablespoon lemon juice
1 tablespoon pine nuts (optional)
orange rind (optional)

Steps:

  • Bring water to a boil.
  • Add couscous, butter and salt.
  • Remove from heat and let stand 5 minutes.

Tips:

  • Use fresh ingredients: Fresh lemons, spinach, scallions, and dill will give your salad the best flavor.
  • Don't overcook the couscous: Couscous only takes a few minutes to cook, so be careful not to overcook it. Otherwise, it will become mushy.
  • Let the salad cool before serving: This will allow the flavors to meld together and the couscous to absorb the dressing.

Conclusion:

This lemon couscous salad with spinach, scallions, and dill is a light and refreshing side dish that is perfect for summer. It is packed with flavor and nutrients, and it is easy to make.
