LEMON BARS WITH COCONUT
There is coconut in this lemon bar recipe, but rest assured it is not a dominant flavor. If you would like, you can also up the amount of zest for a more prominent lemon flavor.

- Using foil as aid, transfer lemon bars to work surface. Flatten foil edges. Cut into 16 bars. Sift powdered sugar over. (Can be made 5 days ahead. Store airtight in single layer in refrigerator.)
Tips:
- Use a firm or extra-firm tofu. This will help the tofu hold its shape when it is being cooked.
- Press the tofu before cooking. This will help remove excess water and make the tofu more flavorful.
- Cut the tofu into even-sized squares. This will help them cook evenly.
- Don't overcrowd the pan when cooking the tofu. This will prevent the tofu from cooking evenly.
- Cook the tofu over medium heat. This will help prevent the tofu from burning.
- Flip the tofu squares halfway through cooking. This will help them cook evenly on all sides.
- Serve the tofu immediately. This will ensure that it is at its best flavor.
Conclusion:
Lemon coconut tofu squares are a delicious and easy-to-make vegan dish. They are perfect for a quick and healthy meal. The tofu is coated in a flavorful marinade and then baked until crispy. The lemon and coconut flavors complement each other perfectly, and the tofu is a great source of protein. Serve these tofu squares with your favorite dipping sauce or as part of a main course.
