4 ½ oz pineapple juice (135 ml) (3 PARTS)
3 oz coconut rum (90 ml) (such as Malibu, 2 PARTS, not white rum)
1 ½ oz coconut milk* (45 ml) (1 PART, or cream of coconut)
1 teaspoon lime juice
1 teaspoon sugar (omit when using cream of coconut)
6 ice cubes
3 oz (90g) frozen fresh pineapple chunks (seven large (1-inch / 2.5 cm) chunks)
3 oz coconut rum (90 ml) (such as Malibu)
1 ½ oz coconut milk* (45 ml) (or cream of coconut)
1 oz pineapple juice (30 ml)
1 teaspoon lime juice
4 ice cubes

Steps:

  • BLENDER Pina Colada (Frozen Pina Colada - this version is served more often in restaurants) - add all ingredients into a blender container and blitz until almost smooth. Blender Pina Colada will have a slushie/smoothie consistency. You can also use a good immersion (hand) blender to mix the ingredients.
  • SHAKEN Pina Colada - add all the ingredients into a shaker or a big jar. Shake it thoroughly, for a minimum of 30 seconds. It's best to use crushed ice here. You can also serve it on the rocks (simply pour the drink over ice). This drink will be a little thinner.
  • Add all the ingredients into a blender container and blitz until the drink has a slushie consistency (or until smooth). You can also use a good immersion (hand) blender to mix the ingredients.

3/4 cup pineapple juice
1/2 cup canned sweetened cream of coconut (such as Coco López)
6 tablespoons white rum
6 tablespoons citrus-flavored rum
1/4 cup chilled whipping cream
3 tablespoons fresh lemon juice
4 cups crushed ice
Grated lemon peel
Ground nutmeg

Steps:

  • Place first 6 ingredients in large blender. Add ice. Cover and blend until smooth. Pour into two 14-ounce glasses. Garnish with grated lemon peel and nutmeg.

3/4 cup peeled and sliced fresh ginger
1/2 cup sugar
Ice
2 cups pineapple juice, chilled
1 cup coconut milk
1 cup white rum, chilled
Pinch kosher salt
4 fresh mint sprigs or 4-inch pieces lemongrass, for garnish

Steps:

  • With the back of a heavy chef's knife, bruise the lemongrass stalk to expose the inside fibers and cut it into 1-inch lengths. Combine the lemongrass pieces, ginger, sugar and 1/2 cup water in a small saucepan. Bring to a simmer and cook a few minutes until the sugar dissolves. Remove from the heat and steep for 20 minutes.
  • Strain the syrup into a bowl, discarding the solids. Place the bowl over a larger bowl filled with ice and whisk the syrup until it cools. Combine the pineapple juice, coconut milk, rum and all of the cooled syrup in a blender and blend; it will make a nice frothy layer on top.
