COCONUT CREAM

Coconut Cream image

Light & fluffy, this easy coconut whipped cream is the best alternative to the traditional version! Just be sure to chill your cans of coconut milk or cream in the refrigerator the night before you want to make it.

Time 10m

Number Of Ingredients 6

2 (13.5-ounce) cans full-fat coconut milk, refrigerated overnight
2½ tablespoons maple syrup
1 tablespoon pure vanilla extract
1 tablespoon lemon zest
Pinch of sea salt
1-2 tablespoons lemon juice (optional, depending on thickness of your cream)

Steps:

  • Scoop the coconut solids that have risen to the top of the can, and spoon it into a stand mixer fitted with the whisk attachment. Make sure the solids have separated from the coconut water in the can - if it mixes, your coconut cream will not whip. Save the leftover coconut water for smoothies.
  • Beat the on high speed until it begins to thicken and and peaks form. Don't over-mix or your cream will soften too much.
  • Add the maple syrup, vanilla, salt, and lemon zest, and mix until combined. If your coconut cream is very thick, add 1 to 2 tablespoons lemon juice, if desired. If your cream isn't thick enough for the additional liquid, skip the lemon juice.
  • Chill the cream in the fridge until you're ready to serve.

LEMON COCONUT DROP SHORTBREAD COOKIES

Lemon Coconut Drop Shortbread Cookies image

These easy shortbread-style lemon coconut drop cookies are like buttery snowball cookies but with glaze instead of a confectioners' sugar coating. There's only 30 minutes of cookie dough chilling needed which makes this a quick cookie recipe.

Categories     Dessert

Time 1h

Number Of Ingredients 13

1 cup (80g) sweetened shredded coconut*
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
3/4 cup (90g) confectioners' sugar
1 teaspoon pure vanilla extract
1 teaspoon coconut extract
1 teaspoon lemon zest
1 and 1/2 Tablespoons lemon juice
1/4 teaspoon salt
2 and 1/4 cups (281g) all-purpose flour (spoon & leveled)
1 cup (120g) confectioners' sugar (or more, as needed)
1 and 1/2 Tablespoons lemon juice
1 Tablespoon (15ml) milk
optional for garnish: shredded coconut, sprinkles, and/or lemon zest

Steps:

  • Pulse the coconut shreds in a food processor or chop them up with a sharp knife so they are finer. Smaller pieces make a more desirable texture in the baked cookies. Set aside for next step.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the confectioners' sugar, vanilla extract, coconut extract, and lemon zest and then beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine. Add the lemon juice, salt, coconut, and flour and beat on medium speed until combined. The dough may not come together at first, but keep mixing until it does. The cookie dough will be thick.
  • Cover the cookie dough tightly and chill in the refrigerator for 30 minutes and up to 3 days. (If chilling for 2+ hours, let the cookie dough sit at room temperature for at least 30 minutes before rolling into balls. The cookie dough will be very stiff after being in the refrigerator that long.)
  • Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Roll the cookie dough into balls, about 1 Tablespoon of dough each, and place dough balls 2 inches apart on the baking sheets. If the cookie dough is too crumbly, keep rolling and working it with your hands. The warmth of your hands will help bring it together.
  • Bake the cookies until lightly browned around the bottom edges, about 14-15 minutes.
  • Allow the cookies to cool for 5 minutes on the baking sheet and then transfer to a wire rack. Make sure cookies are cool to the touch before dipping in icing.
  • Whisk all of the glaze ingredients together in a medium bowl. If desired, add more confectioners' sugar to thicken or more milk to thin out. Dip cookies in icing or drizzle on top. If desired, garnish with coconut, sprinkles, and/or lemon zest. If coated lightly, the icing will set after 2 hours.
  • Cover leftover iced cookies tightly and store at room temperature for 1 day or in the refrigerator for up to 1 week. Cookies without icing can sit covered at room temperature for up to 1 week.

COCONUT AND LEMON CREAM PIE

Coconut and Lemon Cream Pie image

Coconut and lemon are probably my favorite match. This pie has an unexpected shortbread-like crust made with only coconut oil! The result is flaky, crumbly, and delicious. The creamy curd center gets an upgrade using coconut cream! If you serve immediately, the pie will be a bit messier than if you were to chill it for a few hours.

Yield 8

Number Of Ingredients 16

2 cups all-purpose flour
1 cup solid coconut oil
2 tablespoons white sugar
1 pinch salt
¼ cup ice water
2 cups white sugar
1 cup coconut cream
3 eggs
3 egg yolks
3 lemons, zested and juiced
3 tablespoons butter, softened
1 pinch salt
3 egg whites
½ cup white sugar
1 pinch salt
1 pinch cream of tartar

Steps:

  • Combine flour, coconut oil, 2 tablespoons sugar, and salt in the bowl of a stand mixer fitted with the paddle attachment; mix until mixture forms large crumbles. Pour in ice water in a steady stream and continue to mix until dough comes together, about 30 seconds.
  • Transfer dough to a large sheet of plastic wrap. Form into a disc and wrap tightly. Chill for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Press 3/4 of the dough into the bottom of a broiler-safe pie plate.
  • Bake in the preheated oven until golden brown, about 30 minutes. Let crust cool completely.
  • Combine 2 cups sugar, coconut cream, eggs, egg yolks, lemon zest and juice, butter, and salt in a saucepan over medium-low heat. Cook, whisking constantly, until curd thickens and coats the back of a wooden spoon, 10 to 12 minutes. Pour into a bowl and refrigerate until set, 20 to 30 minutes.
  • Beat egg whites, 1/2 cup sugar, salt, and cream of tartar in a glass, metal, or ceramic bowl until stiff, glossy peaks form, 6 to 7 minutes.
  • Pour chilled curd into the cooled crust. Dollop big spoonfuls of meringue all over the curd.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil in the preheated oven until meringue is lightly browned, about 2 minutes. Chill pie until set, 3 to 24 hours.

Tips:

  • For a richer flavor, use full-fat coconut milk.
  • Add a teaspoon of lemon zest to the batter for an extra burst of citrus flavor.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Be sure to grease your muffin tins well, or the drops may stick.
  • Bake the drops until they are just set in the center. Overbaking will make them dry.
  • Let the drops cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These Lemon Coconut Cream Drops are a delicious and easy-to-make treat that are perfect for any occasion. They are moist and flavorful, with a perfect balance of sweet and tart.
