1/2 cup egg substitute
2 tablespoons plus 1/4 cup dry white wine or chicken broth, divided

1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese

Steps:

  • Flatten chicken to 1/4-in. thickness. In a shallow dish, combine the egg substitute, 2 tablespoons wine, 2 tablespoons lemon juice, garlic and hot pepper sauce. 1/2 cup all-purpose flour
salt and pepper
4 boneless chicken breasts
3 tablespoons extra virgin olive oil
1/3 cup of chopped shallot
1/4 cup dry white wine
1/2 cup lemon juice
1/2 cup chicken stock
2 tablespoons capers
1 1/2 teaspoons minced fresh sage
1 tablespoon unsalted butter
1 tablespoon chopped fresh flat leaf parsley

Steps:

  • In a shallow bowl put the flour, salt and pepper and dredge your chicken, shaking off excess.
  • In a large fry pan over a medium high heat, place 2 Tbs. of oil and heat until almost smoking. add the Chicken and cook until browned and opaque throughout, about 8-9 minutes total. Place chicken on a warm platter and cover while you make the sauce.
  • In the same pan over a medium high heat, warm the remaining 1 Tbs. of oil . Add the shallots and sauté until soft and translucent, 1-2 minutes. Add the wine and reduce to about half. Use a wooden spoon and scrape the bottom of pan to loosen the brown bits. Add the lemon juice, stock and capers and cook until thickened, about 5 minutes. Whisk in the sage, butter and parsley. 1 tablespoon butter
1/4 cup finely minced fresh parsley
Zest and juice of 1 lemon, or to taste

2 boneless, skinless chicken breasts

2 tablespoons all-purpose flour
2 tablespoons butter
2 tablespoons olive oil

  • For the buttery lemon noodles: Cook the pasta according to the package directions. Drain and set aside.

Cook it in the butter for a couple of minutes so that a few of the noodles get a little bit of a pan-fried texture to them. Grate in some lemon zest and squeeze in some lemon juice. Season with salt and pepper.

3 Tbsp butter
1 Tbsp all purpose flour
1 c chicken broth
1 c whipping cream
1/4 c lemon or lime juice
1/4 c capers, drained
salt and pepper, as desired
500 g chicken meatballs, of your choice (1 lb)
500 g cooked spaghetti or pasta of choice (1 lb)

Steps:

  • 1. For the meatballs, your choice, freshly made, baked, or frozen (thawed).
  • 2. Heat a pot of salted water to a boil, when boiling, add the spaghetti and cook until tender. Drain. While the water is heating you can proceed on with the rest of the steps.
  • 3. In a non stick pan, add 1 tablespoon of cooking oil, your choice, when hot, brown the meatballs. Work in batches if needed and as they are browned, remove to a plate and set them aside. (I used my baked chicken meatballs.)
  • 4. Reduce the heat to medium and wipe out the pan, add the butter. When the butter is melted, add the flour and mix into the butter, whisk constantly and cook for about 1 minute, now add the broth, lemon or lime juice, and the whipping cream, and whisk together.
  • 5. When the sauce is at a simmer, add the meatballs. Simmer for 5-8 minutes or until the sauce is starting to thicken, if using freshly made meatballs, check one to make sure it is cooked through. Taste the sauce and season with salt and pepper as desired.
  • 6. When the sauce is thickened as desired, stir in the drained capers, let cook 1 more minute, remove from heat. (I added some chopped White Crab mushrooms as well, but that is just me.)
  • 7. Serve over cooked pasta of your choice and garnish with Parmesan cheese. Enjoy.

4 boneless skinless chicken breasts, rinsed,dried thoroughly,trimmed of excess fat (about 1 1/2 pounds)

4 tablespoons vegetable oil
3 cloves garlic, minced
1 cup chicken stock
2 tablespoons drained small capers
3 tablespoons unsalted butter, softened

Steps:

  • Adjust oven rack to lower-middle position, set large heatproof plate on rack, and heat oven to 200 degrees.
  • Cut 1 lemon crosswise into slices 1/8 to 1/4 inch thick discarding ends; set aside.
  • Juice the other lemon.
  • Sprinkle both sides of chicken breasts generously with salt and pepper.
  • Measure flour into pie tin or shallow baking dish.

4 chicken breasts, boneless and skinless
1 c Panko bread crumbs or 1/2 cup flour
pinch salt and pepper
2 Tbsp vegetable oil
7 Tbsp butter, unsalted and divided
2 medium lemons
1 large shallot, minced
1 large garlic clove, minced
2 c chicken stock (I use low sodium)
1 Tbsp chicken stock concentrate, optional
2 Tbsp capers, drained
3 Tbsp parsley, finely chopped and divided

Steps:

  • 1. Heat oven to 180 degrees. Juice one whole lemon, reserving juice. Cut the second lemon from pole to pole and cut off the end pieces. Fruit side down, slice ONE lemon half into very slender slices, reserve. Use the other cut half for additional juice to make 1/4 cup of fresh lemon juice or plate garnish.
  • 2. Butterfly each chicken breast into two pieces, then cut each piece in half. Pound chicken to about 1/2 inch thick. Dry chicken thoroughly with paper towels. Salt and pepper both sides lightly.
  • 3. In a large skillet, add 2 Tbsp oil and 2 Tbsp butter. Heat to medium-high.
  • 4. Dredge chicken pieces in Panko crumbs or flour.
  • 5. Fry half the chicken pieces until browned, about 2 minutes. Flip chicken pieces and brown on the other side for an additional few minutes until they are cooked through. Add the remaining 2 Tbsp oil and 2 Tbsp butter for the second batch of chicken and repeat.
  • 6. Plate the pieces as they cook, wrap with foil and keep in a warm oven. NOTE: If chicken is browning too quickly, reduce heat to avoid burning.
