Steps:

  • Place chicken breasts on a flat work surface. Slice each horizontally through the middle, being careful not to cut all the way through to the other side. 1 lemon
2 tablespoons butter, melted
1 teaspoon basil
1/3 cup rice, un-cooked
2/3 cup white wine or 2/3 cup vermouth

  • Preheat oven 375 degree (f) Put 1 tablespoon butter into an oven proof dish stir in the rice until all the grains are coated.

2 (10 ounce) split chicken breasts, bone-in and skin-on
salt and freshly cracked black pepper to taste
2 cloves garlic, sliced
6 sprigs thyme
2 slices lemon
1 tablespoon olive oil

  • Fill a large pot with water and place a sous vide cooker into the water. Set temperature to 148 degrees F according to manufacturer's directions.

1/4 cup butter or margarine
1 cup onion, chopped
2 cups mushrooms, sliced

1 cup water
1/2 cup feta cheese, crumbled
6 medium-size boneless, skinless chicken breasts
Salt and pepper
Dijon Mustard Sauce:
3 Tablespoons butter or margarine
3 Tablespoons flour
1 cup chicken broth
1/4 cup cream
3 Tablespoons Dijon mustard

Steps:

  • In medium saucepan, melt butter or margarine over medium heat. Add onion and mushrooms and cook for five minutes, stirring frequently. Add thyme and lemon zest and cook for 2 minutes, stirring frequently. Add lemon juice, water, rice and contents of seasoning packet and bring to a boil. Reduce heat to low boil, cover, and cook for 25 minutes. Remove from heat and let cool for 15 minutes. Mix in feta cheese. While rice is cooling, preheat oven to 375°.
